He's only used uncontrollable monster point to beat one opponent, and stuck to his usual changing between forms to beat every other opponent he's faced.
He used monster point to be Dosun post timeskip most likely because that's all he needed, pure power was enough. In a sea where giants can be one shotted, that won't work against better opponents. We'll see Chopper return to his previous form jumping style, don't you worry.
How does it make a difference? Monster point is by far his best form, as it's so much stronger than every other form he has. This shows that since they've recruited him, he hasn't evolved as a fighter at all other than post time-skip when he can now control his form and has some variation. Even against a fast opponent, his monster form is so much stronger than everything else especially since he can tank hits as well.
I am talking about him switching constantly to different forms as he did during Drum Island, he never bothers with that tactic anymore. He's been a huge disappointment and it's irritating since he could have been something special but is put along with Nami and Ussop as the scaredy useless trio unless it's the typical 1v1 end of the arc scenario.
