That doesn't really matter. They've never been in a position for it to occur.
Zoro could've taken down several past opponents that the Straw Hats have faced, including Hody, Caesar, Mr. 3, Wapol, Bellamy, etc. They're always regulated to Luffy because they're the main antagonist of the arc, no exceptions.
You're crazy if you think Luffy wouldn't trust Zoro to fight someone if he told him he'd handle it.
This isn't a matter of trust. Luffy is going to be the one to say "I'm going to handle this, then go save Sanji".
Law and co are also there so Luffy isn't really needed.
Luffy almost certainly wasn't the only one on Dressrosa capable of taking down Doflamingo, or the only one capable on Punk Hazard of taking down Caesar, or the only one on Fishman Island capable of taking down Hody, and etc. He always gets mad that his friends have been harmed and decides to be the one to fight the main antagonist.
They need all the help they can get here, since he's attacking the island directly. If something goes horribly wrong, you can say goodbye to the island of Zou.
You just listed the reason Luffy wouldn't leave. He had to repay Zeff.
He really didn't have to though. The plot just demanded for it.
He sent Zoro & Usopp in his place. That's not the case here. You're not helping your argument at all.
Okay? The point is that he didn't leave an in progress conflict to deal with something that was probably more urgent for the crew. He stuck around to deal with Krieg, then departed.
Law rejected Luffy many times yet look what happened.
There is a huge difference between "we're going to do it this way" and "you're going to take us somewhere". Pekoms' only promise was that he wouldn't take anybody, and even though it was technically broken, he still has no obligation to take them at this time.
How do you envision this scenario going down? "Hey Pekoms, Jack is attacking the island… but we're going to leave because Zoro can handle it!". No way Pekoms goes for it. He'll say "Okay okay, if you guys help me fend this guy off, I'll take you."
He did not fulfil his promise. Big Mom only wanted Sanji and that's exactly what she got.
While true, he still isn't going to leave his homeland when we know he has something against Jack.
The drama of "but I didn't fulfill my prior promise" hasn't really come up. That could've been something we heard in the original conversation.
He's injured. He's not going to be able to much of anything regardless of what's happening.
This really isn't significant. It's just asking for a dramatic scene where he tries to defend his homeland and Luffy steps in to help.
It's his homeland. He isn't going to not try to defend it, especially since he's mad at Jack.

Sanji couldn't fight her. That was practically the entire point of that exchange.
Most of this can be applied to several different characters.

Which utimately means it'll be a group effort, no? That contradicts luffy's statement of beating up Kaido by himself.
No? It's the same as the crew talking about facing Crocodile, or CP9, or any other individual/group. He was talking about dealing with all of Kaidou's forces, including allies and underlings.
No one is claiming that Luffy won't clash with Jack.
So he's going to clash with him and then stop because Zoro shows up?
All of the strawhats are friends with the minks. Why are you acting like Luffy's friendship is more significant?
All of the Straw Hats were friends with Nami. Luffy was still the one to face Arlong from the get go.
The Curlyhat team have a much stronger bond with them.
Not from what we've seen. Luffy has built up an incredible bond with the Minks in the past day.
And if you believe this, why would the Curlyhats leave? They're on Luffy's team for the Big Mom infiltration.

The word fodder does not mean what you think it means.
Zoro having to take down a much weaker opponent than him is nothing new. The Monet fight was exactly that, but it doesn't make her fodder. This is also assuming Jack's potential reinforcements are all weak, which we have no idea of.
Chopper is the only strawhat with medical knowlege. What use would any other strawhat have?
It all depends on what type of medical procedure he'd have to do, where the procedure would be, and how many enemies would be in the way. At the very least, Law can go with him.
And Chopper is also part of Luffy's team. That's another reason they won't leave.
Why the heck would the minks need outsiders to use their trumpcard, whatever it is?
Think of it like an escort service. The Minks are injured. The potential for whoever goes to activate the Trump Card being attacked by Jack's invading forces is high.
