From her Wikipedia page it appears Kyary started 2011, and then gained popularity 2011-2015. Pudding debuted January 2012. So it's not impossible, but I don't know how famous Kyary was in Japan at that point.
But characters change over time so it's not impossible that Oda took some inspiration after Pudding's reveal.

It's very possible that will later find out that that's how the giants, or at least the warrior portion of them, marks their graves and that we'll see more of them but the fact that we're first presented to 3 swords like in the monument and Oda's known love for vikings makes me bet this was a direct reference.

It seems like most fantasy books focus on the more modern, stern, repressive gods. And even books that deal with Greek mythology don’t generally show the benefits or joys of following a god dedicated to letting things go. The closest gods I can think of that do get used a fair bit are trickster gods, who, while having some similar attributes, aren’t quite the same thing.
It would be cool to see a character like Joyboy used in a novel, a god that inspires dance and music - perhaps to excess, like the dancing mania that struck people in Europe between the 14th and 17th centuries. “It involved groups of people dancing erratically, sometimes thousands at a time. The mania affected men, women, and children, who danced until they collapsed from exhaustion.” (source)
But even just acknowledging that people need relaxation of some sort, joy, expressed in the form of a god, even excess in revelry, would be a nice addition to fantasy pantheons of the future.

Now I wonder if the dream Luffy stated as a kid is something like "make the whole world dance", as it would fit this JoyBoy and also explain Luffy's obssession in finding a musician for the crew.

I'm on my cell so I can't post pictures, but Kaido's hybrid form reminds me a lot of Gibachi from Toriyama's Kajika. Specifically (spoilers for the comic)
The face is the most similar part. The way the mouth, nose, eyebrows are drawn.
I'm not sure if it's a direct reference or a result of Oda's style being influenced by Toriyama, but it was cool seeing Kaido fighting and getting reminded of that one random comic in my bookshelf.
