sure Sanji seems cool but this is the new world can't treat things easily have to think things through before moving forward or you'll jeopardize the crew.
Which is why Sanji took the option that did not involve opposing the force of a Yonko, when he had other options. He also manage to keep the rest of the crew out of it.
Nothing in the story Zoro heard suggested Sanji took the wrong the decision. As clearly, Brook and Nami illustrates that Capone had no intention to negociate and that way Big Mom will be off their back for a moment. Zoro being indifferent and belittling his crewmate does not make him smart and no one even suggest to go after Big Mom before he started his whole argument. Again, no one suggested that Sanji had to be rescued, and they simply showed some concern for Sanji well-being but if you think belittling people is the only way to communicate or that Zoro argument made sense(or even made sense), I can only say I disagree.

Maybe the reason Sanji has an only alive bounty is because the government want to use him as leverage against the Vinsmoke.
