I'll make it simple= You are applying 'real world physics' to the One Piece world.
There are rules broken by the power of the devil fruits (all of them)
There are rules broken by oda's ignorance (Chopper faling faster or slower depending on his weight)
There are rules broken because it's funny (Wapol's decapitation, eyepoping characters)
There are rules that we don't know if they are being broken because it sounds plausible, but it's impossible to get these conditions (Brook's water run, knock up stream, the great fishman island dragon current)
There are rules that are broken by pseudo science of mysterious substances (Fishman island bubble, mysterious sky island clouds)
There are rules broken for oda's style (Pell/Pagaya/FrankyFamily/GaleyLa/EinesGiants/Lacuba(tounge bitting slave pirate)/Victims of Caesar's "death" cloud survival)
There are rules accidentaly broken (Mr 3 and the super floaty wood)
Without a precedent we can't asume that these real world rules don't aply, and if they are broken, should be explained in whatever way possible, (or handwaved). Until there's a precedent we must asume that if someone were to stand in an oil puddle over water, they would sink, but we do know, that logias can go into an inbetween state, like Caesar gas state, or when they are recovering from damage, so an oil logia should sink, unless it's transformed it's body to oil and would distribute it's mass in the water, without sinking. Almost half of it's body would be in contact with water, but none of it would be submerged, so we can't know if the devil fruit weakness would kick in and be just a blob until landing.
