Jinbe's already been asked to join and essentially accepted, with no mention of the Sunny Pirates. He talked about other responsibilties, but not them. Any obligation to stay with them didn't occur to him during his conversations with Luffy or with Neptune. It would be extremely random for them to suddenly be brought up, regardless of what you personally want.

We've seen Jinbe lose against top tier fighters like Akainu. He wasn't able to change the tide of the war, or take care of the Fishman Island problem. Just because he is the best at a particular sub-specialty doesn't mean that he's the best, period; it doesn't mean that he can't grow as he faces off against other martial artists. Like Luffy or Sanji or Zoro or anyone, regardless of how good he is at his particular brand of fighting, he'll have to struggle to adapt his style against his opponents and become stronger.
It would be one thing if he were the best fighter, or best martial artist, in One Piece. But he's just the best at fishman karate (and the timeskip has clearly closed the gap between the monster trio and him.) Which is a set school (unlike Luffy's fighting style, Zoro's, etc.), but has barely been seen in the story itself. It's not like we know there is going to be a fishman in every crew they face from now on, which he is automatically better than. He's going to be measured against all sorts of fighters, not just fishmen. Think of Hack - he was stated to be a top-notch fishman karate practitioner, but that didn't matter, since he wasn't competing against just other fishmen.
It just seems ridiculous to suggest that they need to find a weaker fishman, especially at this point in their journey (and after offering to Jinbe and receiving a conditional acceptance.) If anything, it makes Jinbe more of a distinct character among the Strawhats, being a top-class veteran pushing the boundaries of his fighting style.
