Your point was rather clear but not a particularly strong one. Oda could have went about it in many other ways to display his dominance without damaging Sanji's legs without trying. Again, he wasn't even taking him seriously and still had no issues with him. The fact that he got hit from the back by Sanji with Diable Jambe and felt nothing at all (no haki protection) shows how out of depth Sanji is compared to him. Law had to cut to a mountain to take Vergo out while he had his clothes get dirty while fighting Smoker, it's pretty obvious there's a good difference between the two. Smoker is no slouch, he is just at the wrong place at the wrong time against the wrong people post time skip, like Sanji.
Diable Jambe is like Sanji's base move post-timeskip though tbh.
Vergo didn't use his full body haki and Sanji bring out something like Hell Memories, we don't really know how much damage either would have done to the other in that case.
The only other thing I have to say is that we've had a good few cases throughout the series where it seems like one character would have no chance against the other and that really hasn't turned out to be the case, for example when Lucci completely bossed Luffy inside the Galley-La mansion.
Anyway, we're not getting anywhere with this argument so we might as well drop it up unless Sanji actually has a full fight against Vergo at some point, or someone along the same lines.

Sigh Making me remember that disgrace again.
Oda's treatment of high ranking marines after timeskip makes me bitter.
It's even worse in hindsight, considering how little interaction Law and Vergo actually got in the flashback.
It should have been Smoker, winning that fight.
Yes, I am bitter about it.
I'm afraid I have to disagree with you here, Darth.
Law, as the fulcrum for the entire plan in that arc, and the next arc was the only one who should have put down Vergo.
Smoker winning wouldn't have really benefited anyone or any plot line except for simply giving Smoker another W in his column.
