Also anyone notice that Pica is pretty much falling for the Eneru/Moriah/CC syndrome where he turns into a big target which literally makes him an easy target to just…punch and slice. Afterall he is made out of stone which we've seen both Luffy and Zoro handle pretty well.

In Peekers case it doesn't really matter since he isn't putting his actual body out there.
He's in a bunker, sending out his avatar thingy. One that if broken or sliced, can just regenerate itself
I think, as Zacho said, that Pica DOES have his body somewhere inside the golem. It seems that he can keep moving his "core", that is, his own body, inside of the things he's assembled with. Of course, this being, right now, the entire island, it means hurting him must be really difficult.
Again, that's just a theory. It might very well be that he has his real body resting in a remote room, a la Perona. But I prefer to think that he's bolder, and actually puts his body in some sort of danger and it is indeed himself that enters the fray, even if he can escape damage constantly.
One thing I also noticed is the fact that Pica is leaving the castle which seems pretty stupid. The reason why the castle was mostly impenetrable in the first place was him simply "being" the castle itself and just shoving people off or enveloping intruders into the walls or something. And since he turned into big fat target just begging to get his face punched in OUTSIDE the castle, leads me to think that this is a fairly weak setup for infiltrating Doflamingo's castle by simply disposing Pica. But hopefully I will be wrong and Pica will be smart enough to retreat and guard the castle (and thus have a creative way for Luffy and co to sneak into the castle with Pica still guarding).
Well, we keep talking about the castle, but I see Dofla and co. chilling out in the open. Maybe that's because half of the castle is done, lol. Courtesy of Dofla's Rankiaku, which put Kaku's one to shame. So maybe there's no need to guard the castle, cause there's no much left of it to begin with?

Fire will most likely be the weak spot in him that's finally exploited, but he'll probably have some defence to the majority of fire attacks.
And a certain someone just happened to gain the most powerful fire abilities in the One Piece world.
I do hope fire is not his weakness, though. I also think the fact that he set himself on fire should be pretty telling that he's not actually damaged by it.
