You're right in that.My guess is that human that ate a reindeer zoan DF would have a hybrid form that follow same paths in looks as Lucci, Jabra, and Kaku. There would not be a heavy point, since they are human to begin with. And the full animal form would look like a grown reindeer, and depends on person's gender to if male or female reindeer, since zoan fruits do not change the gender, only species the DF users transform into.
We rarely see the full transition into full animal. In the fight with Luffy, Lucci was mostly hybrid form, only once did he go full animal form - to bite Luffy on the arm, then he went to hybrid again. We do get to see Kaku in full animal form on the cover during the CP9 miniseries
The full zoan animal form seems to be same size as the natural animal, but Chopper's full zoan mode- his human, called "heavy point" is taller than average human, but he doesn't have a perfectly human form,- blue nose and a fur "ruff" at the front of the neck, the heavy point is the smallest difference in Chopper and othre zoans.
The biggest difference is what charastic they keep from their original from whent hey go into the hybrid form.
From Lucci, Jabra and Kaku we see what most zoan hybrid forms look like=mostly anthromorphic with most of face being animal-like, the jaw is more human like, giving an almost mask-like look to the face.
Chopper's hybrid form is the form we usuaully see: the cute chibi one, Brain point, that is mistaken for a Tanuki.
While humans that ate zoan DFs have a hybrid form that is very much bigger than their normal form, Chopper's hybrid form is smaller than his nromal form.
