Why do you see the point of raising a scenario that is entirely speculative and contradictory to what the actual story tells us?
Because we are all speculating here, and what the actual story tells us will only be set in stone in a year or so.

Yamato isn't actually a guardian deity.
Neither were Chaka or Pell, but a character can find purpose in being a symbol to others.
The dialog had me taking it as cuz that's what DF Yamato ate and that's what Kaido wants him to serve as that's exactly what Yamato won't do.
Yamato won't do it because his father wants him to be a phony guardian that exists just a figurehead to continue his father's oppression.
Nothing prevents Yamato to actually embrance the role himself later.
This is like the Falcon in the Disney series. He didn't want to be Captain America at the start of the story. In the end, he find out that the role was his to play, and found meaning in becoming a symbol to others. This could very well be Yamato's character arc. Especially when Yamato wants to be Oden, and Oden greatest failure was as guardian of Wano.

This "I told you so" right can be reserved for either side of the argument.
