Always recommend the Visual Novel to newcomers of the franchise.
But alas, it's too time consuming so the anime is the alternative. Ufotable did a decent job with Unlimited and I'm glad that you are somewhat watching it in order..?

you can grab the digital copies of Fake/Strange Fake. Something more akin to Zero and is written by Durarara author with approval from the main writer, Nasu.
There was the Fate route adaption but we don't talk about that because it is terri- does not exist.
Fate Apocrypha and Fate Last Encore are both mediocre when compared to the canon and it's more of a turn-off your brain kind of thing.
Kaleid is fun if you ignore a lot of established rules and it's just..a lot of fun and dramatic. But it's set in a really, really alternative universe.
Problem with Blade works is that a lot of characters monologuing gets lost in the adaption and that's what makes a huge part of Fate great.
Once you finish Zero, do give Fate Grand Order(mobile game) a try. It's pretty much one of the top gacha games in japan right now and rightfully so.

Other than a few bullshit calls from the writer(s), the universe is well established and marvelous to enjoy.
There's a reason why Akihabara is filled with Fate merchandise and it is the oldest and strongest/top-selling franchise that stem from a visual novel.
Other type-moon/Nasu works include the glorious Garden of Sinners, the god-like tier for action anime movies. Maybe you'll check it out, who knows.
I've watched 10 eps of Fate Apoc and I am enjoying it. Very different compared to the other series, (even Fate Illya is tied to the main story in a sense) but it's still good.
I watched all of Fate Zero, and I do agree that it is overall, probably the best of what there is, but it did drag on in some places (The caster shit took too long and suck up time away from more important things imo)
Fate/Cooking is relaxing and warm to view, and I enjoyed it.
I also watched the first Heaven's Feel movie, and I thought it was really good, but it felt like they were holding A LOT of the juicy stuff for the next film.
After I finish Apoc, it's off to Carnival Fantasm, Fate Extra. I'm probably gonna skip the OG Fate adaptation, cause from what I watched it does NOT look good at all.
