Funny, in some way or form Sanji needs to apologize to someone.

I agree that Sanji owes the group an apology for not trusting them (particularly Nami who practically kick-started the Rescue Sanji plan) and we do have the whole issue with what Zoro's reaction to all this will be. Oda might be saving the apology for when the entire crew is together to get Zoro's reaction out of the way too.
That may be the case, once the crew reunites, they will see the state Sunny is in, so questions will be asked. Maybe Luffy is knocked out until they reach Wano. Everyone realizing that Luffy ended like that by confronting two of the emperor's commanders. Kinda setting the mood to what is to come.
However, I cannot see it become a grandiose sort of thing. Zoro's threat was to leave the crew if something like Ussop happened again (and Zoro's a man who doesn't say things lightly) and I'm not sure I can handle another "crew member leaves the team" straight after Sanji's. There's the possibility that Zoro will let it slide so long as Sanji apologises (same as what happened with Ussop) but that sort of undermines Zoro's threat.
I believe that he might tell Luffy they need to talk later, and then we can theorize for years when will that time come.
Then again, Zoro also threatened to kill Luffy if he becomes an obstacle but completely subverted that (although this and that hold completely different weights).
I actually take those two statements and think what kind of reaction will it get when/if he finds out of what happened between Luffy and Sanji.
I would like to see some form of Sanji understanding and realising the trouble he's caused and an apology would be great but not yet. The threat has to be dealt with before that happens.
As you said, if this is saved until Wano, the Sunny in a horrible state, Luffy maybe others injured and maybe Pedro still "dead". I would think that after everything is said and done, it might even be Sanji that brings it up with his apology to everyone.

I perceived it differently. Nami had been tormented by pirates from a young age. Her plan was to steal whatever gold Luffy had. But the more she traveled with him and started to understand him, the more it questioned her mission. When she leaves them at the Baratie, she had started to get attached. That's why as she leaves she questions if they would ever let her back once she was done paying for her village. But she didn't really know how far Luffy would go for the people he calls friends and comrades. That's why when Luffy puts the hat on her, she is shocked. The weird pirate that sees a hat as a treasure, simple minded, an honest fool with impossible ambitions, is telling her that she is also precious to her. She didn't understand that, for her that is not what "real pirates" are like.
Even if she did know the extent of Luffy's character, it pales in comparison with Sanji. She did not see the fight between Zoro and Mihawk how Luffy reacted what he did for the Baratie against Krieg. Sanji has been there since they saved Nami, Robin, and the separation they had and how hard they all trained to comeback together. That's why I think it is weird he caved in so easily. Maybe not weird, it is understandable, he tried to solve it all by himself, so he got caught in the trap. I guess the question is: why did he abandon so easily the potential helping hand he had with his friends? I think Sanji's predicament wasn't as impactful.
She had good reasons and so did Sanji. He didn't just decide to quit the crew. His plan was to go to the wedding and deal with his Vinsmoke issues by himself and then comeback. That way Luffy would be free to focus on Kaido and not worry about BM and the Vinsmokes coming after them.
And I am saying that him deciding to solve everything by himself, falling into a trap and almost costing the lives of the same people he tried to protect. Had he not been so eager to solve it all, maybe even at the cost of their lives is short sighted. Luffy is the man who wants to become the pirate king. His confrontation with Big Mom is all but inevitable. It is in his path to achieve his dreams. Sooner or later it was bound to happen and the reaction I was waiting on Sanji was similar to what we saw of Jimbe.
I understand that Sanji got hit by trauma. I think it started affecting him from Zou. That smile he gave everyone was a goodbye. Not a I am coming back, everyone saw through his poker face. The little bits of parts where Sanji is fighting back, or talking back, are more bark than anything. Personally, if Oda has added the iron mask as part of Sanji's shackles, and imagining every scene we saw from him with the iron mask. Especially Luffy vs Sanji. But because the trauma wasn't emphasized more visually, I don't cut him any slack. Also, because he is a perv.
I don't see how Sanji insulted any of the Strawhats and we all know that all the words that he said during his fight with Luffy were utterly false. He was just put in on a mask and Luffy understood this immediately.
We know that Sanji was purposely trying to say things to hurt Luffy. But, those words came from somewhere. It is fine to know that maybe they did not carry any real weight to them, empty if you want. But things were still said. Verbally abusing others because you are going through a hard time is not an excuse. That's why I am saying if he had any integrity, he should realize that he said some hurtful things and apologize for it. Or at least for the kicking around Luffy.
So yeah, I don't believe that he should apologize to Nami for anything.
He should apologize directly to his captain though.
