I don't really want HxH to end any time soon. You people have it quite good, you know. Sure, it might seem annoying that Togashi goes on break all the time and the story is not as far as it could have been.
But what you really need to ask yourselves is this: Does it really even compare to one of my favorite series, Glass Mask?

The story is still ongoing, there's been 4 anime (and they are mostly the beginning of the story, the most recent anime was a gag series and the one before that was only 51 episodes and covered the whole plot until around volume 40). The first anime was from 1984. I have the soundtrack and it's a vinyl record. The plot has gone on so long that the characters are now in an alternate looking world that mixes the 70s-80s with modern times (they have cell phones now). There's multiple live actions and movies.
Oh, and NONE of those adaptations have real endings. They are all To be continued endings.
Suzue Miuchi has been saying she'll end the story for years. Her breaks are EVEN LONGER than Togashi AND she publishes her story in a monthly magazine (Hana to Yume).
At least the art is always nice.
