Zoro said he would never lose to another swordsman after Mihawk whooped his ass.
The VERY NEXT arc.
Zoro loses to Arlong after getting up after whooping Hatchie. Ending up helpless (albeit fearless) in his arms.
Arlong is someone who has a sword (even a special distinct kind!) and uses it sometimes as he does against Luffy.
Zoro makes no mention or interest of Arlong in this regard. In other words, Zoro does not consider this a loss to a Swordsman.
Other people Zoro lost to or ran away from who used swords at some point:

Well, Zoro might not be interested in Shanks, but Mihawk certainly was. :)
I think it's pretty clear those two had some sort of big frenemy relationship beyond sharing a style of attack.

The only real opponent Zoro cares about is Mihawk and that's only because he holds the title of strongest in the world. It's not like Zoro's out to defeat every strong swordsman out there. For example, Vista is apparently a well known swordsman, but Zoro hasn't indicated he's looking to fight Vista.
Zoro only cares about being number 1, but he doesn't seem too picky about the opponents he faces. Heck he wanted to join the tournament just to show he can be the champion even though nothing about the tournament seemed to indicate swordsman fight there.
Zoro is not a guy soley obsessed on Mihawk. Every strong swordsman he runs into he is eager to challenge, and EVEN non swordsmen to some extent as you point out.
This for instance means he does not consider Rayleigh a swordsman either, since unlike Shanks? Who we can only speculate on? Zoro did run into Rayleigh and made not even the slightest peep about him one way or the other.
