Everyone is hoping that Luffy would use haki in this arch,but he is not in a tight spot right now,he has a lot of supporters.I think Oda would save the dramatic haki moment to the marines HQ or maybe the sea battle to save Ace.
If Luffy starts using haki everytime he is in danger to magically defeat all his enemies it's going to turn boring pretty soon.
What if he utilizes it as a technique like gears or his other attacks and his opponent gives him a hard time anyway? It's not like it's a magical energy that automatically defeats opponents. Just think of it as a new power-up like Gears.
But yeah, that is my point. When backed into a corner, Luffy can change his offense to suit his opponent. I dunno, maybe I'm thinking of the same thing, when I'm thinking "creative" you're thinking "intelligent." Still, there's a bunch of ways to hurt Magellan without touching him. Here's how I think the fight will go:

Luffy beats on Magellan with the environment, using stone and cages and stuff-> eventually Magellan turns things around by melting everything->then, in the end, Luffy finally uses haki in some fashion to end the fight. Sad truth is, if haki could make Luffy a normal human when being hit then it can make Magellan a normal, non poisonous human when being hit.
Erm, it'd stop his body from producing any more poison but it's not like it will remove the poison already on his body.
