Even Majora didn't have one town though, Zora Concert Hall, Goron City, Deku Palace, and even Romani Ranch could be counted as other settlements. Not to mention the various little houses here and there.
Skyward Sword literally only had Skyloft. And no Clock Town alone wouldn't have fixed the Bad Mario 64 feel of everything around it.
To be fair, I think Faron Woods where the Kikwi lived was supposed to count as their "Settlement", even if they didn't have like, well defined homes and shops or anything.
As far as filling the world map with towns and the like, I know Aonuma is looking to shake things up this time and change conventions, while going back to a huge open world with non-linear dungeons, but we know ALL of the conventions of the series aren't being thrown out. Despite his clothes, Link still otherwise looks like Link, Epona is Back, the Sailcloth is back, etc etc, so we could easily see more towns similar to ones from prior games come back.
Looking at the history of the series, something akin to all of the following are possible:
Hyrule Castle Town - Main Populous Town
Ordon - Smaller Farming Village
Kakariko Village - Small Non-Farming Village
Snowhead - Snow-Covered Town
Lake Hylia - Some people living on or close to the lake.
Sunken City - Melting Snow caused a Venice-like City
Island - A Village or town surrounded entirely by water
Goron City - Mountain-based home of the Gorons
Zora's Domain - Water-based home of the Zora
Gerudo Valley - Desert-based home of the Gerudo
Ikana Valley - Desert-based ancient site/ruins
Kokiri Village - Forest-based home of the Kokiri
Woodfall - Swamp/Forest-based Home of the Deku
Romani Ranch - Small self-sufficient ranch
Skyloft/City in the Sky - Some kind of Flying city
Something New we haven't seen before
Each of these things offers something unique and full of potential. If some kind of equivalent to at least half of these towns ends up in the final game, it could be really rich and full. Not to mention if this game had an element like the Dark World/Lorule/Twilight Realm where they can have a Whole other version of the map with different versions of any of the above to add to the variety.
I just see the VAST untapped potential here and I choose not to really judge or worry about anything with regards to this game until we get more footage and I have something to judge or worry about.
