Well, not quite. If you have the freedom to change your body into something at will, as well as create and control that same something, then you are a logia. Anything else is a Paramecia. Luffy is always rubber, he cannot become rubber at will, nor can he create it. Likewise, Mr. 3 can create and control wax, but he cannot become it.

This is a matter of opinion, I suppose, but it seems to follow Oda's line of thought: any force of nature, natural element, natural phenomena, or whatever you want to call it, is what Oda uses for logia powers. Earthquakes would be seen as a natural phenomena or force of nature, water is a natural element, fire, smoke, magma, thunder/lightening, mud, earth, etc. Things like glue, or honey, or syrup, which are byproducts of nature, are reserved for paramecia. Mr. 3's wax powers, Califa's soap powers, and Luffy's rubber powers are perfect examples of that. I know it isn't perfect science, but it's fiction, it's Oda.

Well again, it's important to note that they can create, control, and become their power. Bellamy, for example, could change his body into springs at will, but he couldn't create them outside of his body. Hina's probably the closest thing to an exception for this rule, but if anything she makes it clear that even if you can create, control, and becomes something to a degree it doesn't necessarily mean Oda intended it to be a logia.
In any case, I said it earlier in the thread, but the SFX used for Caribou's power was 'doro doro', which is the onomatopoeia for something muddy. It's a double expression, as 'doro' by itself means mud. Chances are pretty high he has the Doro Doro Fruit; a mud logia.
