The whole point of Funimation's Job is to adapt things for an English Speaking market.
They produce a dub of the show so you don't have to research the Japanese language.
And you're complaining that they've changed 1 letter, but still kept the pun? In dubbing terms that would actually get

Because they did a good job showing us that the Ginyu force were named after dairy products amirite?
or how the Tsufuru (fruit people) fought the Saiya-jin (veggie people) under the rule of freeza.

Or how Krillin's name is technically "Kuri" (chestnut) and "lin" as a (shao-lin monk)
which combines to give you Kurilin, who has a daughter named Maron which is also a nut.
Regarding "Korin," is it fact that that was FUNi's intention, or are we just going by assumption?
Same people that took Tenshinhan and turned it into "Tien" and "Tien Shin Han." As well as changing the pronunciation of "Saiyan" to "Say-an" and spelling Freeza as "Frieza." Sometimes logic was never really applied.

In the mid-nineties (when FUNimation first got Dragon Ball) they had no clue what they were doing. Their scripts were lazily translated by Toei (Engrish, inconsistent names) because they could not afford their own translation (not until 2000-2001). As such, FUNimation's dub was pretty much blindly tossed together in the writing stages (with terrible rewrites due to not knowing what the Hell they were doing and to trying to make the show "more American"). The episodes were edited by the producer's brother at the time (showing just how little they had to work with, considering he was still in cocllege at that point) and even when FUNimation was using the Ocean Group they only had a dozen or so actors on hand. All of this combined doesn't really lend me any reason to think there was any thought placed behind changing Karin (or anyone else's) name.

Funimation have all but admitted that their original dub of DBZ was a complete and utter mess.

Your argument would make sense if they had done this with… Any other name in the entire series.
The Ginyu Special Corps? (Ginyu = Milk, ReaC(oo)m = Anagram of Cream, Jheese = Cheese, Ghurd = Curd, Butter = ...Butter...) Nope, (Ginyu, Recoom, Jeice, Guldo, Burter)
The Tsufuru-jin? (Anagram of "Fu-ru-tsu" or "Fruits") NOPE! They're now the "Tuffles" according to FUNimation.
Kuririn's name? (Chestnut) Nope, "Krillin". The Genki Dama? (Denki Gama = Rice Cooker) Nope, "Spirit Bomb". Freeza? (Freezer) Nope! "Frieza" (The name spelling was changed so that it no longer resembes its namesake)

The former. FUNimation's subtitle track has no problem stiking to the write names and terms, neither should the dub.

Japanese puns work for people who speak Japanese, without much explanation.
Japanese puns don't work so well for people who speak English, even with explanation.

There's translating names… leaving proper names untouched... and then there's translating words.

There's one of the few things that bothers me about the DVD-subs. Why is he still "Kami-sama"? It's not like Kami-sama is his name or anything, heck, I know it was used as a noun on at least one point, (Kaio telling Goku about the Saiyans' past) so why can't the subs just call him God, when that's so obviously what he's supposed to be?
Kami-sama = Super Kami.
Bulma's name is written 'buruma', taken from 'burumaa' (bloomer) so her name should technically be 'Blooma' when pronounced in English. Unless we want to start calling Freeza 'Furza'…

"Sama" isn't literally "Lord", it's just a sign of deep respect. It's USUALLY translated as "Lord" because that's easiest, but there are several times I've seen where something better would fit.
Usually, it's applied to "Kami" because MOST people respect God, so he gets a form of high respect.
But like, In Hellsing, Integra is called "Integra-sama" by a lot of people. She actually has a title "Sir" so you'd use that for her.
Calling someone "God" or "A God" is PRETTY respectful on its own, so it's not needed.
What other word would you use to talk to a god.
Actually, you could use the honorific -dono, which is even higher than -sama. Basically it means lord and it confers the utmost respect.

Also consider trademarks, copyrights, and tie ins. When you play the games, or look at the toys, there's litte and and . Meaning legal stuff and money has been invested around those names.
Kami has been, well… Kami, stateside for like 15 years now. They weren't about to change that. And no aimed at kids shonen series stateside is going to have "God" as a main character. Especially freaky green alien god.
It'd be kind of like going back to Robotech, redubbing just the Macross portion and changing Rick's name to Hikaru, and getting the actual Japanese actress who voices Minmei to phonetically do the English part. Which, obviously happened, but only because there was a very specific audience for it, and its really really jarring to anyone that grew up on Robotech. More accurate and correct and with brief moments of Minmei in the shower, sure, but jarring.
No robby, I saw Robotech too and it had scenes of Minmei too.
And Kami is kept because that the translation everybody used. Even our dub that even acknowleged that god lived at the top of the Karin Tower Called Him Kami-sama.

Well didn't you guys say they were all food names? Burdock is the name of a root vegetable. Was that in the Eng trans? (Ed. D'oh–was obviously skimming. Sorry. I see it was the Dutch) The Japanese word for that veg is "gobo."
