Luffy will become Pirate King, raise an amazing crew, fight his ultimate opponent and tie him, get captured somehow, and be executed in Logue Town, right after telling everyone to find his treasure.
Zoro will become the World's Greatest swordsman, then move into the mountains and create a dojo for bright and upcoming students. He will marry and have a daughter who will also be a master swordsman.
Sanji will return from the Grand Line after finding All Blue and be marooned while trying to save the life of an orphan boy who wants to find All Blue himself. Left with little food, he will eat his foot to save both himself and the boy. Later, he will start his own resteraunt with the boy.
After mapping the entire world, Nami will hide the map somewhere and join the Marines. Her unit will be decimated in battle, and she will find two orphans whom she will take home and raise them in Cocoyashi Village.
Usopp will gain a fleet of 5000 men and a suit of armor full of many, many gadgets, only to have it destroyed by the Up-and-coming third Pirate King. He and his second-in-command will return to the Grand Line.
Chopper will grow ill, but find a maricle cure on an island far away, and return to the Sakura Kingdom, taking upon a student. His student will accidentally poison him, and he will die, having lived a wonderful life.
Robin will become curator of the "True History" Museum, which will be destroyed by an uprising from the reformed Marines. She will perish trying to save the tree, but not before sending a child with the knowledge of the true history on their way.
And lastly, Franky will be arrested shortly after Luffy's capture and be taken to the new Marine Prison for the rest of his life.

i get what you're saying though, everyone will live their idol's dream but i think the highlight will be the fact that they change the ending and thus get a better life.
Luffy - ok i really see him getting executed, but at the same time he would have already done something which changed the world. roger probably died knowing the truth, luffy would tell the whole world the truth but then be killed. Even though he is dead, the whole world knows and the government will be overthrown shortly after his death.
Nami will continue sailing as many have said. She wants to draw a world map. this would probably involve sailing the grand line another 6 times as well as all the other blues. She will get an eternal post to every island on the grand line and she will be the only one to have it.
Sanji finds his all blue. Not only that but thanks to Luffy's triumph and nami's map it will no longer be a dream for all cooks but an easily accessable place where he will have a restaurant. i doubt he will be marooned again but i think it's more something like this: some guys get marooned and the baratie is passing by after a few days. they members will all be exhausted and hungry and sanji will personally proceed to feed them his greatest meals. they will turn their back on him only to be instatly defeated by sanji (who then hires them as cooks?)
Zoro gets bored of life and starts running around looking for challenges/students.
Franky, pleased with having made a ship which sailed to raftel will start working on a secret project. Probably a modified version of pluton which is more gadgety than it would be destructive. He would also be the one to make passing through calm belts an easy task.
Usopp is really hard. He will face a truly dreadful enemy - be brave throughout the whole fight and then turn back into his idiotic scary acts after he's done with him. He is instantly made famous and will get thousands of followers, who will simply run around the world fighting no one but just proving their strength and amusing villages with stories of their captain.
Robin will be happy knowing the true history but still run around looking for more ponigylps now searching for other information. She will have everything recorded and will be the one telling of the 2nd pirate king's adventures.
Chopper will be part of usopp's troupe, boldly telling usopps adventures (true and made up) whilst healing 'incurable' diseases on Captain USOPPU's travles :)
