As far as One Piece goes, Toei has been pretty smart when it comes to pacing, much better than some other studios. I mean, I'm surprised that Bleach is still airing with how Studio Pierrot burns through material.
Yeah, Bleach is probably doomed. I give it two years, at most. Really, considering how slow the manga is going, Bleach pretty much CAN'T be made into a decent anime while the manga is still going. It worked fine during Soul Society, but that was back when they still had a lot of stuff to work with. Now that they're almost caught up, they're essentially standing with one foot in their own grave.
But the One Piece-anime won't get cancelled. They've got enough stuff happening in each chapter to make a decent episode of it for the most part, and it's WAY too popular to just stop because they ran out of material. At least, it wouldn't PERMANENTLY stop. Maybe it'd go into a hiatus for a year or two, but I'm pretty sure Toei will continue the One Piece-anime until the series is over.

…or they could do it like most normal shows and have seasons. During the off season, say 4-5 months, they would focus on good animation and efficient episodes and I f they took the first break after Thriller bark, the next season could go until

…That would actually be pretty awesome. Sure, it would mean only 26 episodes a year, but it would allow those 26 episodes to be completely filler-free, as they would have about 50 manga-chapters that they could base them of, while still NEVER risking to catch up to the manga.
