Outside of a kind of super specific case where creating sake or another type of alcoholic beverage is plot relevant ("King Loki of the giants refuses to meet with you unless you can provide him with a drink that satisfies him", or "turns out One Piece was Bink's Sake all along and has been fermenting for 800+ years, and it's up to you to get it through the final stage of the process so that it is worthy to finally be delivered to Imu in Mary Geoise and fulfill the promise made by Joyboy all those centuries ago"), I don't think getting/making alcohol is really that much of a problem, certainly not something that requires an entire crewmember dedicated to it.
By and large, I'd consider buying, stealing, or otherwise acquiring booze as just a part of acquiring general provisions… Cause for a shopping trip and/or raiding someone's kitchen, but not for hiring a full-time specialist brewer.
Kinemon joining the crew could theoretically make it so the Strawhats have an unending, infinitely variable wardrobe and never have to buy clothes again, but I don't think that means they need him on board to serve as their dedicated clothier, nor do I think his presence would stop any one of the crew from going on a shopping spree for even a second, should the mood strike them.
Obviously, if/when Yams joins, there will be plenty more to him than just whatever his "ship role" ultimately ends up being, but I'm not really seeing the need for a brewer, much less any substantive hints that Yamato is one.
Like I said earlier, for the moment, I'm leaning toward a general "fighter/combatant" kind of role for Yams at the moment, because his combat prowess is the bulk of what he's shown to us thus far. If he has a secondary skillset beyond that, I think it's probably going to be revealed either through a more in-depth Kaidou/Yams flashback sequence before his father is finally defeated or during the downtime after the fighting is over.
