Sanji has his main weapon - his leg - fractured by a kick from Vergo who isn't even even hardening himself and using his bamboo. Vergo leaves and Sanji then ominously comments about what would have happened if the fight continued (you think Oda didn't put it in for a reason).
If the fight had "kept going like that".
That's a whole lot different from "if the fight had continued".
Vergo didn't pull out his Bamboo and whatever, and Sanji didn't pull out stuff like Spectre or Hell Memories.
The exchanged a few kicks and it ended.
It was a short skirmish that means nothing.

He's been fighting Pica for a while now.
He's finally managed to land a decent blow with one of his stronger attacks, and the fight isn't finished.
Yep, if uberarrogant Zoro puts out some smack talk, then the other guy's totally weak grrrr.

Considering Vergo and Pica have the same rank in the Donquixote family, and Zoro haven't break a single sweat so far against Pica while Sanji's leg cracking and his commentary after his little skirmish against Vergo…

Vergo was stated to be Doffy's right hand man, the first to join his crew, we don't really know how the elite officers match up to each other.
I mean look at the WB commanders, where they all automatically the same strength? Not even close.
Zoro's been fighting Pica for a while and only just managed to actually land a decent slash…I wouldn't say it's been without a sweat at all.
