So I kinda failed my chestnut pudding. :/ But I did another erh, dish or whatever. "Eggbeer". :) It's egg and beer! Totally tasty! Here's a recipe from "Kvinnans Bokskatt"(The Womans Book Tresure), a book anno 1913.
For 3 people:
5 yolks
0.4 liter svagdricka
0.15 liter beer
(You can just use beer instead of svagdricka.)
The drink and the beer is boiled together and is poured, boiling, under strong whipping on the yolks.
Serve with skorpor(rusks or biscuits?); sugar and spices, like nutmeg, cinnamon, lemon peel and so on, added as you please.

@wolfwoof:
So does the kidney fat add some special flavour that you couldn't substitute
Cause that kind of thing sounds like something that would've been rationalized during the years
It's been said it's the best fat. :) I know some fancy cooks use it. It reminded me a little of bone marrow fat if you're familiar with that. Sorta savory.
It's was too much of a hassle to get for me though. >___> I wish I knew a butcher or something.
Rationalized? :S
