Probably because he really doesn't care as long as it keeps Luffy occupied, really.. He's actually already manipulating him if you think about it.. and he gave the fruit to Diamante for a reason.

It's a very good theory and i think it's possible but i don't like it because Coby's power will always be weaker than Akainu's. And i expect when luffy becomes Pirate King, Coby become the strongest Marine. Ok, i know that devil fruit does not matter so much but it will be stupid someone with Ace's power manage to beat Akainu.

As far as how he organized the tourney you've probably gotta chalk it up to shonen-logic; things just pop up ready to go whenever Oda feels like it.

This makes a perfect sense! Buggy is that kind of guy who wouldn't never come by himself, he always uses his subordinate's to get what he want's. Also, look at Barto's pants, they are kind of from the circus, right? And let's not forget that Buggy is always after money. He stole Bara Bara no Mi from Roger's ship to sell it forward. He must have a same plan this time too.

I think the term "His Pace" in relation to Doflamingo is more about him being a mastermind and being able to manipulate people.
Like in terms of a fight, a bigger slower fighter fighting against a smaller quicker opponent would look to ground him and stop speed being a factor ie. He wants the fight to be at "His Pace".
So when Law warned Luffy not to get caught up in Doflamingo's pace, he basically meant don't play into his hands and do exactly what he's trying to get you to do.

As a string-fruit user it would just be logical that he would somehow control them like a puppeteer.
DD just being able with his fruit to bring objects(toys) to life seems a bit off…like why would he do that in the first place and why would a string-fruit allow that, without them being bound to him.
(but Kuma and Hawkings also have that kind of odd powers afterall)

I still don't see how Doflamingo just left Vergo and Monet on PH. I mean he should of been able to sense there presence, odds are at least Vergo is a live since his 'death' was offpanel. I don't get him, he was during Mock Island, Saobody, and Marineford saga a very easy going but merciless guy who used people strictly as tools and only respected the strong. However now he's afraid of Kaidou, didn't want to drop his shichibukai title (which he earlier said he'd drop in a heartbeat), wants to be pirate king, lost control of his former subordinate (Law), and cares for those weaker than him (Monet). It seems like PH and Dressrosa Dofla is a totally different character ftmp, I miss the care free and violent Doflamingo who used people so effortlessly. That's why I wanted him to fight Luffy and why he WAS one of my favorite characters, he seems too soft right now and I wouldn't mind if there was more hints to this in previous arcs but it was like very evil mastermind –-> mostly evil guy losing his grip on the world.
I personally don't find Mingo all that confusing. He has uniqueness to his character, but when you boil it down he is someone that is pretty much a typical manipulative scheming coward who will say and do any and everything to benefit his cause and control people, and he only seems like such a menace when his con is working. Now that things are out of order for him in a serious way, his true nature is revealed.
This kind of thing, as an aside, is why i find it kind of annoying when bit characters (which, in practice, Mingo was until recently) get popular. Of course they SEEM so cool and awesome. We only get to see glimpses of them which of course are gonna be highlights that don't tell the whole story. I think you can only have a true appreciation for character once you've seen them struggle and how they react to adversity. I wonder how popular, for example, Blackbeard would be if one of the first things we saw him do was cowardly beg for his life.
