The rumble ball works (to my understanding) by allowing Chopper to alter the wavelengths of his transformation in such a way that he can achieve peak performance in specific areas of his choosing. At it's most basic, the Human Human Fruit gives Chopper the option of being a beast (one wavelength), a human (another wavelength on the other end of the spectrum), and a hybrid (the absolute middle of the spectrum between the two wavelengths).
The rumble ball would allow Chopper greater concentration and control over his transformations, giving him the ability to settle into any wavelength between the three points of his transformation spectrum. By this logic, he would theoretically be able to transform into an infinite number of points, but only a select few points are actually useful in any sense, so he focuses on those wavelengths exclusively(Arm, Jumping, Horn, and Guard).
During the time skip, Chopper trained himself to be able to access certain useful wavelengths without the use of a rumble ball. It is entirely possible that he would still be able to access Jumping Point should he want to, but if Kung Fu Point possesses an already satisfying amount of jumping power with tremendous arm strength, then logically, he would choose to go with Kung Fu Point for most of his battles.
I guess what I'm trying to say is, the number of points that Chopper "says" he can transform into reflects the number of points that he wants to transform into. The actual number of points possible is infinite.
I doubt it's infinite but as long as there are equal or more than pre-timeskip, I'm satisfied.
