There's no reason why we couldn't have had both. It's just a missed opportunity to get more emotionally invested in the chefs. Just imagine the impact that final scene with the nitro could've had if Makubee was given an ounce of personality/screentime.
Same with the fact that Kousairou is working with the rich dudes. If the whole betrayal had been given an emotional impact, or maybe if Kousairou's first appearance wasn't with 10+ other new people and when the 0th Biotope announced there was a "traitor" in the group, the story could be that much more heightened.
That being said…I don't hate those scenes/reveals. And there's a lot of things I really liked about the chapter. Especially the pretty art.
I liked the set up with Chiyo and Setsuno. Setsuno's show off scene was great. It was cool when she projected her broken abilities and scared the crap out of all those beasts. I like that Makubee's head is shaped like an onigiri. And I agree that the nitros are awesome. But I also like the msucular devil looking beast at the right.
