I was under the impression that on average there were more. Though it's hard to know much since it's rarely ever talked about.

The usual manga volume I see that mentions them doesn't have more than 4. Sometimes 4 and an apprentice, or something like that o_O

I'm not sure about the average but from the few mangakas that I recall having their assistants mentions. Watsuki had at least four (though they may not have been there at the same time), Masashi Kishimoto has four, Kubo has three, and Miura has Studio Gaga (which I vaguely recall reading that it consists of five people excluding Miura.)

I've heard rumors that togashi(hxh) ,Rumiko takahashi(inyuyasha) and hagiwara(bastard) did everything themselves

I know the only help Togashi gets is from his wife, but I don't know about the others.
While Get Backers was running, Ayamine had a shitload of assistants on hand, and frequently had to borrow from his old master Fujisawa Tooru in order to keep his deadlines… though it should be said that that series probably put out almost twice as many volumes in a year as other weekly series.
In another series I read, the mangaka thanked her mother for helping place tones... ^_^;;
