You would be mistaken then. Mark Henry, Batista, Cena , Orton are not good in-ring wrestlers. They are, to varying degrees, good entertainers, but their wrestling prowess leaves much to be desired.
HHH, Jericho, Edge, Michaels, Rey Mysterio, Hardys - these are some examples of performers who are more skilled in-ring.
Kurt Angle's point was that (and I agree with him here) the WWE roster had become pretty thin in talent. There simply was not enough variety in the competetion. "WWE has this idea of 7 feet 350 pounds monsters, but these guys are not actually that good of wrestlers." I may be paraphrasing a bit, but thats about what Angle said in an interview taken around the time he quit WWE and joined TNA (the vids somewhere on youtube).
If you look back to the 90s, you'd see what he meant. Even the mid-card matches were awesome. Even in early 2000s, there were the likes of Rock, Lesnar, Benoit and Eddie Guererro.
Rumour has it that HHH had personally asked Jericho to return as the WWE roster was shallow on talent.
Of course, much of the interview was Angle promoting TNA, but still he had a couple of valid points there.
