Big business obliterating individuality has been the way things work for the past century and change; bread especially has fallen victim to that as just about every state and often different towns within those states grew different varieties of wheat and had totally different breads as a result. The railroads killed that by making it easy to send bulk amounts of flour as well as seed anywhere in the country.
Of course, things really went to hell when a way to keep sliced bread fresh was invented in 1928, but that's a different story entirely.
