I can't believe I forgot about the final Seymour battle in Final Fantasy X. He was kind of an annoying villain, IMO but that fight was unbelievable. The whole element switching reminded me of Magus from Chrono Trigger, and the music playing was great.

Man, I'm so glad to see all the FFIX love in this thread! Sometimes I feel like I live in a deserted island loving that game! I actually some really unpopular opinions when it comes to FF… I loved VIII-X, but and consider VII one of my overrated and overhyped games of all time. I always get heat from the fanbase because of that.
And despite the terrible androgynous design, I actually thought Kuja was an excellent villain, my second favorite in the series, after the guy in my user-name. Unlike Sephiroth, who pretty much become a non-entity with a convoluted backstory after his origin flashbacks, he actually had a lot of personality and presence, always stayed a step ahead of you, and kind of mystery, and by the end of the game, you REALLY knew him. His motivations were fleshed out extremely well, and even made him somewhat relateable, while still being a nasty and twisted nihilistic bastard.
The characters are probably the main strength of the game... They're probably some of the most memorable and charismatic I've ever seen in an RPG.

Fuck yes, that shit was great. Colossus #16 is the personal favorite.
It was great to climb that tower, then finally get to the open field where he's at. And he's just standing there, his hand pointing towards you, not moving. And you're like: "… Well, fuck."
You run and forward and BAM!, giant fucking lasers. That kill you instantly on Hard mode.

What made the final Colossus even better for me was that you lost your horse just before it. I was really attached to her. So I just felt like kicking somebody's butt and, lo and behold, there was one big of a butt waiting just for me.

Agro is a male horse, not female.
And it's Wander's fault for Agro's misfortune, not the Colossi. The whole point of the game is that you're playing with the true villain of the story [though Dormin isn't exactly a great guy, either].

I remember fighting Gruntilda in Banjo-Kazooie back in the day. It took me months to find all 100 jiggys and finally get to come face to face with her on her rooftop. I think the fight was split up into 5 different phases. First you go in for close combat, then shooting at her from a distance, after that you have to fight her in the air, and finally summon the jinjos to blast the crap out of her.
Even if you went in fully prepared it was hard, and as the only real boss battle in
the game along with some awsome music it felt truly epic. -

Zack and Wiki, there are two fights that I consider epic so far…(Still on the last area.)
The first is against Chillion. The link contains some puzzle solutions, but the video ends before a total solution. So some spoilers
The second is against Hexleg, which is a great ship vs. sea monster style battle..With a turret gun, harpoon, depth charges (sea bombs) etc… and a satisfactory victory strike.

Am a huge fan of rocks and boulders, despite how odd that sounds. Anybody who is composed of, or fights with, giant rocks is an automatic winner.

Radiant Silvergun and Ikaruga have uber-epic boss fights.
Especially the final bosses in each which have a final form that involves doing nothing but DODGING their attacks.
Also, pretty much every shmup by Cave. The true final boss of Ketsui, DOOM, is nearly impossible to beat without bombing or losing a life. I saw a video of one player almost beating it with NO LIVES OR BOMBS but died at the VERY. LAST. SECOND. Insanity.
For laughs I'd say Gradius boss fights are "epic" because all you do is sit there while the boss dies :P
Thunder Force V also has epic boss fights. Guardian's Knight and Rynex are two that stand out, especially Rynex because as you fight it you hear a remix of the intro theme from Thunder Force IV (Rynex is the name of the ship you pilot in TFIV)
Also, every boss fight in the Famicom shmup Recca Summer Carnival '92. One of the bosses shoots black holes that push and pull on your ship while firing bullet spreads and lasers. Not to mention the small bomber miniboss which is the size of your ship and spews bullets all over the place when it appears. The game is like the Gunstar Heroes of the Famicom, it really pushes the system's hardware to the limit.

The fact that you only lost half a heart every time Ganondorf hit you made the fight extremely lackluster, as well as the fact that you could just do that little clashing thing over and over again to kill him without any effort.

The Final Bowser fight (and level) in Galaxy was extremely dissapointing as well. Definitely took my opinion of Galaxy down a notch (still a great game tho).
Anyways, Raven King Bohan in Heavenly Sword was pretty epic. The battle took place in this huge battlefield with all the soldiers attempting to butt in only to get bitchslapped by even trying to touch Nariko or Bohan. Not to mention, that the fight was pretty damn difficult and just a joy to behold.

That 5-part battle against Zant in Twilight Princess. Am I the only one who loved his sudden change of personality? I thought it was far more epic than against Ganondorf. Love the way he gets more and more desperate and finally snaps and pulls out his blades and starts swinging wildly

It's made for young, casual-gamer children. Young children don't want to walk in to a boss fight and never be able to beat it. You've got to remember that Nintendo is a family-oriented company, so when it comes to their mascot's series, they're going to make sure a kid with mediocre gaming skills can, at the very least, beat the final boss.
DKC1 pissed me off as a young kid because I couldn't beat K. Rool; always got nicked by one of the cannonballs. Had to shelf the game for a year or two before I managed to finally complete the game.
The "challenge" is Mario games come from some of the hidden levels, i.e. getting all the Stars. Sure, it might not be hard for people of our age and experience, but I'm sure those Three Trials Star levels are pretty damn hard for some kids.

The only difficult Bowser fight I know of was in Paper Mario. Granted, I knew less about how to prepare properly the first time, but that was irritating.

You just need to walk into a Nintendo game with the mentality that it's going to be fun and enjoyable. If you go into it expecting some challenging experience with epic bosses that take lots of strategy to take down, it'll end up disappointing you.
Some games are just made to be simple, cruise-through-and-enjoy-how-well-made-it-is fun. Mario is one of them.
