I've already beaten Normal mode so far (having everybody's moves at Level 5 when I did so), and I'm currently in Hard mode at Gorge Island. I've basically been grinding Luffy's stats, and collecting massive ingredients so I can feed everybody each dish twice. Currently, the only moves I have for Luffy that aren't at Level 10 are Balloon, Storm, and 600 Pound Cannon.
I wanted to use my setup where I can record footage to my Dazzle Platinum, but I got a new HDTV and it doesn't have any S-video/composite ports in which my setup would've worked. I'm looking for an older TV, in order to avoid buying new expensive capturing equipment.
I've been wanting to answer a few questions I saw here, and since the GameFAQs UC1 board is too slow, I'm going over here for now.

Dinkleberg, all you have to do is go to a fishing spot, move around it until you see the words fishing spot on screen. face towards the water. Pull out your fishing rod, shake the wii remote up a little just so the fishing hook will go out a little further. Then after that wait until the hook start's to shake press and hold A after you thrusted the wii remote up to reel the fish in. If you notice that the fishing bar (the little bar on the fishing rod icon on top the screen) is starting to run out release the A button for a few seconds until it recharges a little bit and then do it again until you have the fish. hope this helped
You forgot to add the part that when the Wiimote starts shaking violently, look at which direction the bobber(?) is being pulled towards, let go of the A button and tilt the Wiimote in that direction to release tension off the line.
The larger/rarer the fish, the more drastic the Rod Meter will drop when there's tension.

Just walk up slowly to the bug from the side (meaning you don't face the bug directly). Keep a short distance between you and the tree. Swing the net sideway to catch it. This is the hardest bug to catch in UC1. The other one is the fire beetles in island 4 before fighting Ace.
And there's one thing you have to notice, those special bugs like ice/fire/sleep, they emit an "aura" which will basically prevent the net from capturing them (in Unlimited Adventure, you had to upgrade your net to capture these). What I do is, I wait until they emit the aura once, I wait a bit more, then they'll most likely do another aura immediately after, THEN I swing.

Got my first "Game Over" at Moria so now I'm gonna feed the crew some of Sanji's meals. I just want to know if it makes any difference to whom you give what, or if they'll all reach the same maximum hp/sp regardless of what you feed them?
You can feed each member a type of dish twice, then it'll just give them +1 for either HP or SP.
Let's say for (a made up) example, if you were to feed Luffy a pizza.The first time you would feed it to him, it would be +20 HP, the second time you feed it to him it would be +10 HP, any further feedings, it would only do +1 HP. I can't remember though if this game has a "Golden" dish like in Unlimited Adventure in which it gives a random upgrade amount. I currently have the Angel Omelette and Large Mushroom Salad feed to each member twice (18 dishes total for each item).
