Quartermaster- The Quartermaster has as much authority - if not more - as the Captain. The Captain really only has any authority during battle. The rest of the time, the Quartermaster oversees everything. (Pirate ships are democratic, though)
Bosun - The Bosun is in charge of the gear and equipment.
Sailing Master - The Sailing Master is in charge of the sailing.
Cooper - The Cooper makes barrels to store things.
Carpenter - Self-explanatory
Surgeon - Self-explanatory, although oftentimes the chef would double as the surgeon.
Gunner - The Gunner is in charge of the cannons and other arms.
Pilot - The Pilot is in charge of navigation
First Mate - The Captain's right hand man. Usually there isn't a First Mate if there is a Quartermaster.
Powder Monkey - Powder Monkey is a term for sailors - usually young - who were pressed onto a pirate ship and made to do menial labor.
Helmsman - The Helmsman works the helm
Topman - The Topman is the guy in charge of the topsails
Midshipmen - Really more of a Naval thing that a pirate thing.

Or, in the case of Going Merry, the big stick they push back and forth. It steers.

Proper what? A proper helm? The helm they have is a proper helm. There are different kinds of helms. Caravels have the kind Going Merry has. Which makes sense, because Going Merry is a caravel.
