I'm curious as to how the anime and the manga gap gets less and less when both come out on a weekly basis. Do multiple chapters equal one episode?

Correct.
It's pretty much impossible to make 20+ minutes of animation from 19 pages of manga so most One Piece anime episodes cover approximately 2 chapters each.

The anime would probably be boring as heck and drag on forever if there was one episode for every chapter.

Those 8 minutes recap + some stand-alone fillers (SHs flash back earlier, etc) prevent to have 100+ fillers like Naruto.
The next filler arc would be after their return on W7 and there is plenty of things to imagine. One Piece fillers aren't that bad so I guess it'll be ok xD. -
Well, Naruto had a few good episodes out of those 100+fillers. And I think maybe a 20-25 episode filler-arc would be nice. It would be a good length(unlike the 1-3 episode naruto fillers), have time to develop a good storyline, and give the manga time to fill the gap.
But, the opening sequence has gotten longer recently, which is good in two ways, and hopefully they do the same thing with future openings.
1-Added some more filler into the episode
2-Allowed the viewers to watch the whole music video, rather than just half of it -
The smart thing to do would be to animate the side-story mini-arcs.

What about the Ace mini-arc? That should do well seeing as Ace is so popular and all. Also ecwcwwe, I think they took out the ending theme in order to make the opening longer. I'm not sure if that's correct but a lot of the raw versions of the newer episodes don't contain the ending anymore from what I can tell. shrug

I think after their return to Water 7, the fillers should begin after the Straw Hats escape the island, and everyone around the world reacts to the new Wanted posters (I can't remember the specific chapter that happens in, maybe 438 or 439). Then I am all for filler arcs until there's enough manga content to get back on track again.
If Toei wants to take a year off doing filler, heck, I'm fine with that. They make pretty good fillers, considering the worst was the one with Apis and the Ryukotsu waaay back when. And even that was tolerable.

I have a question. Certain filler episodes like in the post-alabasta arc there are flashbacks that showed us something new about how Zoro met Yosaku and Johnny and Chopper curing Dr. Kureha. Are these considered canon even if Oda didnt do this in the manga?
