Why do you say he's strings? Why couldn't he be blood or something of the sort? (What am I talking about… I don't think elements have blood (lolz)).
Oh, I was just under the assumption that that was the general consensus. I think it's pretty solid at this point. He contorts his fingers like a puppeteer with strings when he controls people and there was the thing where he cleanly sliced through Oars Jr.'s leg. String fruit would wrap up all of that stuff pretty nicely into a coherent ability. But until it's actually stated he's Ito Ito no Mi, it's all up for debate.

He'd need 10^10^10^….^10 strings to control all of the particles in smoke/sand, or molecules in gas, or electrons in electricity, etc. Ice would probably just shatter and reform, magma and mud are liquid so he couldn't even grip that, photons and "darkness" are immaterial.... I don't see any of the logia's falling for that.
As for the fire/plasma discussion. "Fire" is not an "object" or a "state of matter." "Fire" is a reaction. It's the actual transition of organic molecules and oxygen turning into carbon dioxide and water. What we see/feel as "fire" is the heat and light that is released due to this reaction. That heat breaks apart molecules, producing plasma (ionized matter). So, technically, Ace is "organic molecules and oxygen," not heat/light/plasma/ions/etc. CC wouldn't be able to control plasma because it's actually a different state of matter (it's in the realm of Enel).
The devil fruits of Mr. 5, Magellan, and Smoker are all practically subsets of CC's… The guy got pretty lucky.
Usopp's plants will provide a continuous oxygen supply while CC tries to drain it.
Actually, looking at that picture and the more I think about it, the more I think it'd be kind of cool. Definitely the kind of thing that would just make readers go "WTF", which is something Oda has quite the mastery of doing.
And it could be a nice addition to the continuing trend of outlandish creatures: Reindeer, Demon, Cyborg, Zombie, Fishman (?), Alien (?). We have land (Mole Chopper), sky (Winged Robin), and ocean (Jinbe). Might as well add space?

Kuzan's not actually an "Ice" person (i.e., there is no actual "water" in his logia form, other than what miniscule amount of water vapor is in the atmosphere immediately proximal to his body).
That's a common misconception due to somewhat of a mistranslation. None of the logias are simple solids (sand is granular matter and has fluid properties in bulk; smoke is a colloid of solid suspended in gas, also having fluid properties). The more accurate translation would be to say that Kuzan is a "Cold" person, or a "Freezing" person. He doesn't turn into "ice" but rather "cold" which deposes the gases around him and gives him solid form temporarily (thus explaining his badass "steam" effect, which is just sublimation of those gases).
As for actual theories:
This idea of non-solid logias also serves as evidence against any predictions of Wood, Metal, Stone, Earth, etc. logias.
So far we have: granular matter (sand), colloid of solid in gas (smoke), gas undergoing combustion (fire), electric charge (electricity), mass (gravity), photons (light), colloid of solid in liquid (mud), cold (freezing), and melted solid (magma)
My prediction is that the only other logias will be: gas, liquid, foam (colloid of gas suspended in liquid), and gel (colloid of liquid in solid).
