Holly's missiles pissed me off, immensely. Even if I kept rolling and side stepping, one always managed to hit me.
There's two ways to avoid this that I know of:
1.You can jump into a hole that's been revealed (or just fall into one). You'll avoid the missiles, but you'll still have to waggle your way out. Just keep an eye out for a grenade.
2. If you and Holly are close enough to one of the cliff faces around the beach when she launches some missiles, most of them should slam into the walls. You should still dodge around anyways just in case.
The majority of my fight with Holly took place in the very far corner directly opposite from the stairs where you enter the fight. The cliff face on that side helped to take out most of the missiles on several occasions. I think after launch, they arc upwards too high to reach you if you're next to a wall.
Oh, and here are the lyrics I found in the soundtrack booklet for "The virgin child makes a wish without feeling anything" (because we have some big fans of the song here). They're surprisingly depressing, but they're written by Suda-san himself and drunkenly slurred in English by Masatoshi Moriwaki.
