Yeah, and the story is probably going to continue for 300+ more chapters.
At this point in the story, having only just really seen Big Mom for the first time, and a whole lot of mileage left in her character/actions. it's too soon for her to be defeated.

Him doing that after defeating her at a logical point in the story?

Considering that she would probably blame Luffy for causing said situation in the first place I would say the latter. I mean if she sent an army after Urogue for taking out a commander, what's she going to do to the guy that has been continually challenging her power and screwed up the second most important alliance she's ever made.
She might send someone after him, but she herself would be preoccupied with trying to save the alliance.

Would Pudding leaving/dying really affect the wedding? I don't think Judge particularly cares who Sanji marries and I don't think BM does either. Sure Sanji might become even more miserable and heartbroken, but it's not like his situation changes much. Zeff is still under threat and BM may order him killed the moment Sanji leaves. Oh and let's not forget about his exploding bracelets.

If it were that easy to fix this kind of arrangement then Big Mom's inability to fix Lola's proposed marriage and subsequent anger would make no sense.
