Nausicaa of the Valley of the Wind is very seinen with just the right amount of violence and disturbing moments, though neither of those are near its focus. It is an absolute must-read, there is no literature or manga out like it. But it is considered to be one of the very best on this forum. Do you want to start out with the best? Maybe not.
If not, Kingdom is technically seinen, and it's about to pick up in popularity in APForums and it might be fun to post in the thread about it when you're caught up. It's garnering very good reviews from every AP member that's read it and is still being scanlated.
I don't mind some violence - just not over the top. Actually I am reading Fullmetal alchemist at the moment and nausicaa was the next one I was going to read. Kingdom could be good too.

Vagabond is fantastic. It has sword fights with occasional dismemberment and stuff like that, but nothing like the gore in Berserk
I dislike that stuff too, so you can trust one that one being bearable to you
