Hmm, were there any panels in this or previous chapters showing Sabo's chipped tooth? I wonder if it hasn't been shown yet, or is no longer chipped.

It clearly is, a heart isn't transparent enough to see a friggin icicle inside it.
As a general comment, not directed at anyone in particular: why do some people insists on their opinion being the "obvious" outcome?
If it was obvious we wouldn't have half the voters offering a dissenting opinion.

Here. I cleaned up the actual "heart stabbing" by taking away some of the excess shading.

In the first panel, there's still a lot of blood square between the heart and the spike. The heart isn't being hit.
In the second panel, you can see the distorted shadow of the spike through the blood cube. (Distorted like an object underwater) if it actually hit her heart, that silhouette wouldn't be there, it would just be embedded. Then look at the angle of Ceaser's hand. (I added a couple defining lines to make it more clear.) Rather than being directly above and stabbing downward, in both panels its stabbing at more of a 45 degree angle.
It missed entirely, and at most, grazed the side. You can see the spike on the edge of the heart even in the actual drawing.

As far as angle of the hand, the whole image is at low angle, look at the upper plane of the heart-cube.
Heck, i remember some people arguing that the cubes were hearts encased in ice when we first saw Smoker's because you could see the heart through the flesh. -

The only explanation I can think of is that she's a liquid bio-weapon, like the T-1000 terminator.
Or she can simply reform into her original shape after using her weapon form, which includes blowing up as a missile.
Ironically, T-1000 could only form stabbing weapons, while being unable to produce firearms or explosives. -

I like this theory, but I don't think Vergo or Monet were with him back then.
Vergo seems to be close to Doflamingo's age, while Monet is even younger, and they both call him "young master".
That strikes me as very odd. -

Not sure how this disproves anything, because all you're saying is that Smoker felt pain because his heart was touched.The fact that she coughed up blood, and that we saw the knife go into the heart, shows that it wasn't snow.

We know that a logia's body is human until they activate their power.
Monet collapsing indicates that she does not have the automatic intangibility that Crocodile, or the Admirals trained themselves to have.
Smoker collapsed and passed out after Law removed his heart despite it being completely non-life threatening, so that's hardly an indicator.
Again, we don't know what the rules are for logia's native element, or what she did or didn't do when she was stabbed, so arguing about it is pointless.–- Update From New Post Merge ---
We'll prolly get some mumbo jumbo about how there's always a way to heal a girl's broken heart.

Since she didn't, that scenario isn't possible.
For all we know a logia can't be hurt by their own element. Or perhaps they can but similar element mitigate the damage.
I don't know for sure, and neither does anyone else besides the author, so we'll have to wait and see. -

Snow logia stabbed with ice. At least that's what I see as a likely explanation if she survives.
If it was Kuzan stabbing her then we'd probably get some nonsense about his ice being "colder than her snow", but in this case it's a regular icicle.
