[Solar Knight]

Here are each game's innovations:

Boktai: The Sun is in Your Hand
Had a solar sensor that effected the game world.
Eyetoy
It used a camera that tracked your moves and YOU were the controller.
Dance Dance Revolution
Got gamers off their lazy butts and forced them to use their body.
Karaoke Revolution
You sing into a headset and you are judged on pitch.
Outrun
I think this is the first arcade game to use a "car" as a controller.
Donkey Konga/Taiko Drum Master
In donkey Konga you use bongos to play alongside dongs. Taiko Drum Master is basically the same, but you use a taiko drum.
Lifeline
A terrible game (from what I hear), but is the first voice-activated.
The Legend of Zelda
One of the first story-driven games.
Halo
Multiplayer has never been the same
Tetris
This has influenced most of todays puzzle games
Duck Hunt
I think this is the first light-gun game (I wanted to shoot that dog…)
Pong
This game is really what started the industry.

I've played most of these games, but Boktai takes the cake.

It took the memory card, controller, and made other innovative uses for them. Also the story and gameplay is not like any I've ever seen.

On second thought, if OutRun was the first to use a steering wheel on the arcade machine, then that deserves a pat on the back.

For home console games, I think Grand Theft Auto III's 3D world and interactive city are innovative and did raise the bar of realism and adult content in video games.

I also think Pong and the original arcade Punch Out! should be added to this list as well as Metroid (besides its gameplay, it was also one of the earliest games with a female action lead).

Square was almost broken when it "copied" the idea of DQ and made FF a sucess.

…why isn't Super Mario Bros. for the NES on this list? Its easily one of the most innovative games of all time. There was no other game like it when it came out. And it set the standard for many, many more games of its kind to come out afterwards.

Lists never work because everyone always forgets something important.

Most innovative? Cosmic Spacehead, a platformer that was sublimely bizarre (though not all that amazing gameplay wise) and unique; there's never been another game like it. Ever.

well if we're talking innovation alone, yeah. Although i was sorta thinking influential, too. But looking at the topic title, yeah that'd be correct.

I don't see any of what I thought was innovative up there…

Frequency - Press buttons in a proper sequence to open up various tracks to a song. The better you kept up with the beat and hit the buttons as required, the more song tracks you unlocked. If you did especially poorly, you might have nothing but a tiny baseline beat in the background. You could actually remix the songs to spectacular effects in a mixing mode, and the song LITERALLY depended on the buttons you pushed. It's sequel, Amplitude, was equally cool, but very similar.. though prettier.

Monster Rancher - Raise a monster created based on a cd read in the game system. I spent so many hours looking through my CDs, trying to make the perfect monster. There were many sequels, and later games similar.. but the first is still my favourite.

Magic Pengal - Another monster raising game, but you had to actually draw your monster. Depending on what you drew, it would render it and you could fight with it. As you won tournies, you'd gain more paint to work with. The game itself wasn't amazing, but the whole thing with drawing your own monsters was just plain weird. I've never seen another game do anything like it.

NiGHTs into Dreams - A semi 3-d track-based game in which you travelled around areas collecting spheres used to destroy the machine controlling each area. Revolutionary in its time, there weren't many truly 3d games back then, and none that were as fast paced. It even came with a special controller.

DUNE 2. First game of its genre. There wouldn't have been any Warcraft, Starcraft, Age of Empires and the likes without that game.

KING's QUEST. First parser adventure game as far as I know. No Quest for Glory, Space Quest, Monkey Island, Day of the Tentacle, Indiana Jones, Larry, Gabriel Knight and so on without that game.

WOLFENSTEIN 3D. I guess it's the first FPS. No Doom, Duke Nukem, Half Life or Unreal if that game hadn't been created. It's even mentionned in Wikipedia…

STREET FIGHTER 2. It's not the first beat 'em up game, but the first 1v1 beat 'em up game that definitely influenced many later fighting games like Mortal Kombat, Dragon Ball Z, Tekken, Naruto and all Capcom fighting games.

DONKEY KONG. Long before consoles and home PCs were created existed the very first platform game on small electronic screens. It's the very first Mario game too… All later platform games characters can jump thanks to this game.

ATARI F1 GAME. I don't remember the exact title, but it was the very first black and white raceing game, the one that invented "check points", long before Outrun.

Don't forget the classics : Pong indeed, Pacman, Arkanoid.
