Boktai: The Sun is in Your Hand
Had a solar sensor that effected the game world.
Eyetoy
It used a camera that tracked your moves and YOU were the controller.
Dance Dance Revolution
Got gamers off their lazy butts and forced them to use their body.
Karaoke Revolution
You sing into a headset and you are judged on pitch.
Outrun
I think this is the first arcade game to use a "car" as a controller.
Donkey Konga/Taiko Drum Master
In donkey Konga you use bongos to play alongside dongs. Taiko Drum Master is basically the same, but you use a taiko drum.
Lifeline
A terrible game (from what I hear), but is the first voice-activated.
The Legend of Zelda
One of the first story-driven games.
Halo
Multiplayer has never been the same
Tetris
This has influenced most of todays puzzle games
Duck Hunt
I think this is the first light-gun game (I wanted to shoot that dog…)
Pong
This game is really what started the industry.
I've played most of these games, but Boktai takes the cake.
