Didn't Zoro use Lion's Song or something to break Kaku's Iron Body? Or at least attempt to? You know that move Zoro uses to cut steel, the one that only came about when he realized it was about technique and not brute force?
Do you also realize that Jyabra was the only member of CP9 who could use Iron Body while in motion so just about the entire fight he was using it and Sanji's kicks were hurting him throughout? Of course this is One Piece so a brand new move was the finisher, not particularly necessary for him or Zoro, just a flashy way to end.

Lion's Song was only used on Mr. 1 and to split some train cars on the way to Enies Lobby. Zoro had to power up with his Ashura form to, I assume, do a triple-strong attack on Kaku that was too strong for Tekkai to block. Granted it was the singular attack Zoro was wielding that managed to do so but it still took the guy down in one shot (similarly to how Mr. 1 went down after that one good hit). It wasn't meant to bypass Tekkai defense like Nami's lightning and Sanji's fire.
I watched the youtube fight between Sanji and Jyabura and while it mentioned that Jyabura could use it while mobile, he didn't seem to consistently be using it (like when Sanji ducked one of his attacks and kicked him in the nose; if you catch him off-guard and he's not constantly channeling it - which is reasonable to assume there would have to be limits to that kind of thing) and when Sanji was just barraging him with kicks, it was moving Jyabura but not actually breaking through his Tekkai. Kind of like how you can kick a ball and send it flying without actually damaging the ball, I guess. We saw Sanji do a pretty impressive spinning kick while on the train and while it seemed to rattle Blueno, one of the weakest of CP9, it didn't quite do the trick, so it isn't that feasible for him to suddenly be that much more effective against an even stronger opponent five minutes later.

Not if you remember that Jabura mentioned Douriki only measures someone physical capabilities, not taking into account devil fruit powers.
Think we can all agree Kaku's display was a lot more impressive than Jabura's.
I mean, that's really all I could care about, just a relative measure of the strength of the concerned party's best punch. Even if you had a Zoan DF, you could still use that and see how much it boosts the raw strength between normal human form and hybrid or full Zoan form. Hell, even the difference between a normal punch and a Haki infused punch. Just those little details would be nice to know. Like stats on a baseball card. Obviously we know things like DF abilities are going to throw a monkey wrench into the works like how Foxy gave Luffy such a hard time in spite of their strength difference. But we'd at least know how hard a fight we're in for if we have an idea going in what the base stats of each opponent were.
