The databooks also said Sabo was dead, even there there were multiple blatant clues at the time that said he was alive. It's only final until the manga says otherwise.
The guys putting together the datacards are going for the broad audience, not the hardcore fans over analyzing on the message boards. They arent going to go "Oh, Oda framed this scene ambiguously to give the impression of her death, without actually showing it. ANd then he left the spike in an unusual position, so we better leave her death as ambiguous!" They're not going to do that.
(The anime on the other hand went super blunt and obvious with it… just further showcasing the pains Oda went to leave it slightly ambiguous with his choice in camera shots.)

I personally don't know why Monet coming back would be worthwhile. She could star in a cover story and move on in life, like Gedatsu and the Baroque Works agents, but that wouldn't be any more worthwhile than Oda declaring "this is the New World, bitch!" and killing her.
If Oda can't kill Arlong or Hody, the irredeemable parent killers, the guy that tortured Nami her entire life, and instead just keeps him off camera the rest of the series, he's never going to kill lightly.
What purpose does her death serve, that just knocking her unconscious for a day doesn't serve? Her "sacrifice" didn't even accomplish anything, she failed her task. She didnt die smiling and content with her life, she didn't pass on a dream, and Blackbeard wasn't even there to steal her fruit.
Her "death" wasn't even commented on by her sister or acknowledged by anyone else in Dofla's crew. It added nothing to the overall story,and continuing to be "dead" adds nothing currently. (Meanwhile Absalom being dead shows Blackbeard is serious, and sets up Moria to do stuff) so eventually Oda is going to undo it whenever he gets around to the Punk Hazard/Dresserossa cover story. Dofla has a LOT of flunkies that weren't total monsters to give new lives to, Mr. Pink especially, so that'll be coming any
Vergo it turns out is a parent killer, we learned later, so he might be off camera-ed permanently or reduced to just a harmless head or something.
