The thing with fire bros and hammer bros is one of those I see most of the time as an issue of them landing on the hat and getting hit and not something intentional from the player. Not sure if there's a use either since for them their default design is to shoot at you and move in predictable patterns, not aggressively move towards you.
Which is the core of the problem in a 3D mario game. Jumping on an enemy is not as elegant in three dimensions as in two, hence the idea in 64 to add a melee attack to Mario to simplify the act of attacking simple enemies that approach you, that way goombas are not a horrific nuisance. They just get hit if they get close.
In this game, the default melee attack serves multiple purposes. Thus you have the stupid result where a simple enemy meant to approach the player can be a nuisance to deal with, mainly due to the fact it takes more steps due to the melee attack capturing instead of hurting. Other enemies exist that approach the player too, but those all get hit and die from the cap (spiky thingies, spiney).
Ultimately, it's a minor issue, but it still is worth noting that an elegant solution provided in the original 3D mario games is no longer available, and as a result it is more cumbersome for the player to react. Much like it's often an inconvenience in a third-person game without reticles to shoot in front of you, hence why so many people fall or miss something due to cappy not going precisely where you want it to (volleyball anyone?), and also why Nintendo felt the need to add a homing waggle and other waggle options for hat movement… all of which unfortunately work great for combat and capturing but don't solve the platforming issues.
Lots of little things to talk about the controls in this game when you think about it. Definitely will always dislike the fact that in a world where 4 face buttons are a standard, players are expected to use just two. Cool for accessibility but it makes some design choices in-game rather questionable.
Just a minor note, but I noticed the decorations on Mario's samurai helmet (the deer horns and six coins) are the same decal on Sanada Yukimura's helmet. A nice touch.

I'm so blown away by Odyssey. They did such a wonderful job with the variety of mechanics.

I'm getting pretty far in the game now….... but I'm still having trouble with the god damn jump rope
I still didn't get that one. Games are supposed to be fun, or challenging in an evolving way. That is just evil.
Honestly, the only reason I didn't find the jump rope one fun is because it was too easy. But making it last longer would not solve that; it should have had variable timings or something for the second moon, not just a gradual speed-up. Off the top of my head I think the way to fix the volleyball one would be for the second moon to be for getting a certain number of spikes in a row (like 20 sounds good).
I don't know if it was dumb luck but i got the jump rope Challenge on the first try.
The volleyball one on the other hand … gave up after a few tries.

Eh, it felt about the same. And, honestly, that's part of the problem for me is that it really did just feel like more of the same without a whole lot added to it. Plus, why the hell didn't it have Rosalina?

Difficult to rate honestly. If we're talking about how they play/feel now, there is usually a bias toward later stuff with ironed-out movement, fluidity, camera, and graphics. Honestly I think Mario 64 might deserve the top spot simply for how good it still feels and how well it's aged. Sunshine for example felt amazing when it came out, and it's still fascinating to see the movement achieved by good players, but going back to it is really difficult because there's a lot about it that's not intuitive. Odyssey is also fantastic but it takes certain mastery of Cappy to really feel great and then you realize the core movement without him is very clunky and not all that fun. Galaxy feels awesome but it sacrifices something in its very linear level design. At least it created a neat little hub world. Galaxy 2 is just as fun to play but there's something lame about the level select system.

3D World was also pretty good, tbh, as well as 3D Land.
Nothing since Mario 64 has felt as cohesive, though, with Odyssey coming the closest (with the disclaimer I haven't played much Sunshine). Galaxy/Galaxy 2/World just feel like grab-bags of fun ideas, some of which that really work, some that don't; it's fun in its own way, but the way Mario 64 stuck you in a contained world for juuuuust long enough was great.
Odyssey would have been about the same if you didn't pick up a moon every six feet and have about twenty unrelated mini-games in each map.
