Several of those are just straight-up series. Like calling Star Wars an extended universe is like calling the Godfather movies an extended universe.
Beyond that, though, just because a bunch of those probably suck doesn't mean the idea isn't good or interesting. Really, before this apparent maybe incoming wave of extended universes, the only major ones were DC and Marvel (besides maybe some early TV sitcoms like Green Acres and Petticoat Junction being in the same universe), so we never got a big chance to see the concept played with outside of superhero stuff.
Also, classic horror extended universe sounds rad. Monster Mash: The Movie here we come.
