I understand what you said, and of course it's better to have all manga material (WELL ADAPTATED... OP has all manga material and see what garbage it has become) than lose some bits here & there but... Be honest... Do you think for this little fault FMA:B is not a good remake?
Note: And it was only a couple of chapters lost in the process, 3 & 4 to be exact. The rest is wonderfully adapted IMO. Aswell as the rest of the series, not changing the original story as the first adaptation (CHANGE is the main kind of filler that destroys a series, but not the only one. One Piece is again an example of that with EXTENSION).
And about being too fast is bad, let's take the example of Hunter x Hunter 2011, against its first adaptation.
At first it was AWESOME to say the least, every arc doing with better animation, better pacing (and yes, this USUALLY means faster, if possible not leaving any manga material behind) but when they reached the part that wasn't animated before (Chimera Arc)... WTF!?!?!... They started lagging everything, pacing goes down like a rollercoaster and it was MUCH MUCH worse than it should have been, because I really think it was a very good remake. They made awesome episodes in this Chimera Arc, like Gon or Netero's ones with awesome animation, but pacing was really bad COMPARED to the previous arcs. And why they decided to do that? Just because it was the first time adapting it? Better to make more episodes so we can sell more? WTF... Damn this world.
We do NOT want (no please...) again Goku vs "whatever" looking at each other for AGES, while leaves are dancing between them and the music goes into a climax... And the episode ends... and you realise NOTHING has happened at all ____ (Guess it is too obvious I do not like DB very much... lol).
Anime is not the same format as manga, the same way a movie can't be the original book.
If you just have time for a movie, it is NOT possible to include all things. Just not possible.
Doing a series, you have more time, so you can have it all (good, that's how it should be) but... You can't slow the pacing and have ep after ep One Piece mode, only 1 chapter is unacceptable, less is TOEI trolling as all, 2ch/1ep is One Pace style but IMHO usually not enough (look at the beginning of the series when they wonderfully adapted 3 or even more a few times... Oh, epic times those).
Some examples of average pacing...
One Piece: 24 (EXTENSION... Thanks to the first arcs it's not something like 10 pages per episode, ridiculous)
Naruto: 32 (Shippuden was sooooo bad at first, hilarious, dragging everything as if they do not want to reach the manga... Ok, STOP the series you a$$holes!!! XD Do seasons! HOWEVER they made some arcs afterwards very very good, from Sasuke vs Danzô to Jiraiya vs Pain. Unfortunately Naruto vs Pain AGAIN bad pacing, grrrrr)
Bleach: 49 (Not a bad pacing for one of the three big shonens. Thanks Kubo for ending it that "wonderful" way ¬_¬U)
D.Gray-Man: 50 (Not bad at all)
Shigatsu wa Kimi no Uso: 90 (wow!)
Death Note: 50 (Not bad at all)
Saint Seiya: 47 (this adaptation has a lot of CREATION filler, but thanks to Araki anime is much better than the crappy Kurumada drawings).
Rurouni Kenshin: 58 (Good, a pity it has a lot of CREATION too, and it was not finished of course).
Basilisk: 45 (Not bad)
Fullmetal Alchemist: 71 (Very good, talking about the remake of course).
Hunter x Hunter: 40 (Not bad at first, a little horrible since Chimera Arc starts).
One Punch Man: 121 (OMG... Unbeatable, like Saitama
Second season poor animation but still awesome pacing).
Parasyte: 89 (Epic)
Shingeki no Kyojin: 62 (Good, some parts better than others but overall this is great. Awesome adaptation improving the sometimes crappy manga drawings aswell).
Boku no Hero Academia: 40 (Not bad. I don't really like this series a lot, tho... No luck with this story, lucky people who can enjoy it a lot).
Captain Tsubasa (2018): 84 (Good as a whole, but it should have been even faster, several times they spent a lot of time doing nothing... Ep3 24 pages, Ep4 19 pages for example... WTF)
Kimetsu no Yaiba: 43 (Not bad... Still a little slow sometimes IMO, but UFOTABLE animation is a pleasure to look at).
Noragami: 77 (Good, but some chapters much better than others).
Sailor Moon: 45 (Talking about remake again, Crystal. It should have been much more, almost 2 chapters per episode and not 1, as they always did. Well, TOEI, we can't ask for too much).
I left some other series out of this list, cause they need a remake asap (Claymore, Soul Eater, Akame ga Kiru!... Although this last one had a good pacing, +80 pages per episode).
