The pacing is terrible in the anime they stretch out the storyline to the point where you lose intrest. The manga is much faster

Because Toei will make a lot of money off One Piece regardless of quality, so they're taking the easy route. It's a shame what One Piece's anime has become and I believe it's very disrespectful to the original source.
It's also because Toei unfortunately doesn't make filler arcs for One Piece anymore so they usually adapt one chapter into a single episode. In the past it was usually 2-3 chapters an episode and the pacing was really nice.
Most of the kids that watch it don't know any better and therefore don't realize its faults.

Because a weekly manga chapter when animated, only takes about 7-10 minutes of screentime, depending on how dialogue heavy it is.
The anime is ALSO weekly, runs for 22 minutes, and airs year-round. Add in the fact that Oda occasionally takes breaks or gets sick, if the anime just adapted the manga material with no filler, it would consume an entire year's worth of stories in 3-4 months and would be caught up almost immediately.
This happens with any long running anime, and is what leads to padded out pacing and filler arcs.
The reason the early anime was able to adapt at a good pace is because Oda had a couple years head start so there was more of a buffer, so the pacing was pretty good with minimal filler up through Alabasta… but it started slowing down around Skypiea, then more around Water 7, and finally fell into a full out plodding pace by Impel Down.
