Basically, this thread is asking what would happen if particular elements of the manga were changed, such as the adventure aspects, and such.
I'd say the worst case scenario would be if the death counts were like manga such as Terra ForMars or Gantz.
Sorry if this is too small for its own thread, but it should make some iteresting conversation.
I had thoughts about the death count since the Marineford War. The shows aspect has changed countless of times during its whole run and manga releases.
In the beginning, Luffy had a few rookies Zoro, Nami, Usopp, Sanji and casted on for an adventure against other pirates to get to the Grand Line.
Then it changes when the Government had some kind of evil plot and secrets that they had to hide for thousands of years and luffy with his even bigger crew Include Chopper and Robin were basically outlaws and trying to run away from the world government & marines ever since crocodile the first warlords and the first Logia user in the series which changes the aspect of Devil fruit users and certain Abilities that were left unknown in the series so far.
The story changes yet again when the crew went to save robin which shows a big chunk of the evil plot that the government hid for a while, plus show their true intentions and how brutal they were killing a boat full of civilians just to hide a secrets and a mere child and now Luffy and the crew now with Franky are against the world government and want to take them on they survived the fucking Buster Call
They story got a turn to a different angle of mythical evens when they add brook to the crew in which he is only a skeleton with awesome en guard sword skills. and they must fight against yet another warlord Gecko who controls shadows and makes zombies his slaves. not to mention persona a ghost princess who control ghost that can make you depressed lol.
Now lets move all the way up to when the Strawhats split up. The dream was put on hold when they wanted to get stronger meanwhile Luffy had other plans and wanted to save Ace by then, the animation changed, the color of the show changed, the graphics and the whole comedy behind one piece changed.
Up in the New world the dream was yet again put on hold when Luffy's new plan is to defeat "all" the 4 Emperors in the New world, but that was put on hold because of Donflmingo having the Meru Meru fruit.
Overall, basically each Arc changes the story dramatically. Hope this helps 
Yeah, theres multiple times where the feel or tension increases. But what about the other aspects? What would OP feel like if, for example, if Luffy had a high-tier devil fruit?
That might be possible after all, Luffy wants Ace's fruit.
If Luffy had Ace's devil fruit from the beginning, I don't think his fights would as unique and interesting as they usually are.
Imagine if the SHs killed there opponents. Would Impel Down have been a successful escape?

I like to wonder what the series would be like if the crew stopped at a certain number of people (just Luffy, just Luffy and Zoro, just Luffy Zoro and Nami, etc…), or what it would be like if certain members didn't join.

I agree with one of the above commenters. I think Luffy's DF power is a great fit, he get's pushed every major battle to improve and if it was a higher tier ability (ex. a Logia) then his fight's would be less interesting and entertaining in the sense that he would be able to beat "tougher" opponents with ease, which doesn't make for a good anime or manga in the eyes of viewers/readers 
However on the topic of getting Ace's Mera Mera fruit, I don't think much will come of that. 1. You can only eat one fruit 2. Oda (or Luffy) wouldn't have created the Gomu Gomu no Red Hawk move; as a tribute to Ace if he was in fact going to attempt to eat the reincarnated DF.
What would happen if all of the Straw Hats refused to join and their story just ended wherever. He'd never even make it to Reverse Mountain. Would Luffy give up on that dream and settle for being king of the Baratie's Saturday All-You-Can-Eat Buffet?
I get the feeling this is going to cause an argument more then the idle navel gazing I mean it to cause, but I wonder how Nami's design/character would have evolved if Oda hadn't met his wife.
They met when she was cosplaying Nami.
