Coco produces his poison just like he always does, the monsters (which you are cool with...?) are the reason why they can come to life. I agree it feels kind of sloppy, but I think it's hard to judge until we find out what Shima intends to do with them. Maybe he will give you the scientific connection you speak of, we just don't know yet.
Similar deal with the Devil Fruits....
What about Vegapunk creating man-made Devil Fruits? What about Caesar / Doflamingo producing Smiles? What about Chopper inventing a drug that can enhance the devil fruit abilities? We just don't know what Devil Fruits are and Oda teases us with the explanation since the start of the series. Still we swallow every freakish magic ability because we know that Oda will deliver some day.
Toriko's appetite monsters are not different in that regard. Seriously I would be totally with you if Toriko didn't mention Coco's "Monster within" in that one panel, but he did and that's why I'm willing to roll with it for the time being.
It would have been nice if Shima had dropped one or two hints about Toriko and Coco being poison dolls prior to this chapter. Yeah, hard to disagree that the setup could have been better...but it didn't completely ruin my reading experience.
Where was it stated that these posion dolls are created by his appetite monster? If it were mentioned, it must have been a throw away line. In that case, I'd have another problem because Shima has been very deliberate in keeping the monsters on a spiritual plane, simply a representation of the characters' desires and not actual spirits being summoned into battle.
I have no problems with the One Piece things you mentioned because at the time, they were set up very well, delivered gradually and in a way that made sense with the narrative. Like objects with a devil fruit was a big wtf back then but it was done deliberately so to intentionally shock the readers. Since then, we've been slowly learning more and more about the fruits so the things we already know make more sense in the context of the underlying solution to the big devil fruit mystery, Really, when it comes down to it, it all comes to execution. And I just found Shima's execution of this too Kubo Tite for my liking.

You seem to completely disregard the gourmet cell aspect of things. It isn't just poison. I'll end it with that
Oh, it's more than a stylistic way of demonstrating his techniques. He has created physical barriers/walls with his sound ability. Which makes zero sense. Heck, he has protected Komatsu on several occasions by coating him in armor made of sound ? Grand Knocking actually makes sense in hindsight. The whole concept of knocking revolves around paralyzing living organisms. Turned out at least 70 % of the planet is a living organism.
He can create a barrier of air. Don't foget that sound at the end of the day is the movement of air molecules. It makes sense if we extrapolate from his ability, it's not too much of a stretch.
The earth is solid rock and knocking works by hitting vital nerve points. Punching the ground is not going to stop the earth's rotation. Not to mention the plethora of problems stopping the earth's rotation would cause not least the fact that it would cause an armageddon on a far grander scale than the Meteor Spice.

TLC, as someone said before, Coco's power is not trully poison but Venom (by definition of a poison made by a living being), Mold (mold spear back to his 4 beast piece), Bacteria (ehm.. no clue), it was closer to a colony of sentient mold (like Foo Fighters) than a clone made out of poison.
Now see, if the explanation were that, it would make much more sense. Instead, we just get some vague made out of poison explanation Never once was mold or spores or anything mentioned. And even if that were the case, it doesn't excuse the bigger problem of the sloppy delivery.
