One Piece's tracks are pretty awesome, especially since the music's direction has moved away from the goofy synch stuff from the early days to a more orchestral style.
I also really liked Yoko Kanno's jazzy score for the first season of Darker than Black. Really brought out the atmosphere of the city. I didn't really care for the more European rave-inspired stuff from Ryuusei no Gemini and the OVA. I really liked the grandoise march music from Fullmetal Alchemist Brotherhood.
Fairy Tail also has a good handful of tracks that are more awesome than they have any right being.

I adore the OST's for Gankutsuou, Monster, Michiko to Hatchin, Ergo Proxy, Mushishi, Mononoke and Soul Eater.
I also really enjoy the soundtrack for Kaiji, the songs fit so well in the anime.

Haven't watched too many anime series but from those that I have watched Samurai Champloo, Mitchiko to Hatchin and Soul Eater stand out. Especially Soul Eater has a couple of suprisingly atmospheric pieces there.
And also can't forget Cowboy Bebop. It is a little gem.
Even though it's not a series, Akira deserves a special mention since it conveys the essence of the original material too well. This OST absolutely creeps me out at some points, and I think that was the point.Fairy Tail. Oh god, Fairy Tail.

One Piece's soundtracks have always been an outright joy to listen to. Particularly Movie 7's - Average movie, mind blowingly brilliant soundtrack.
As already mentioned, the original Naruto series soundtracks were fantastic. Love the fusion metal on them.
Despite Bleach's anime being a garbled mess, it actually has a fairly good soundtrack. The flamenco motifs for the Arrancar were astounding.
Then theres the obvious - Elfen Lied, Bebop, GITS:SAC, Death Note etc
Half related as well but the 20th Century Boys movie soundtracks are also amazing.

To be honest the anime starts out rather poorly but gets its act together somewhat around eleven episodes in. It's still got its share of flaws, moves through the material at LUDICRIOUS SPEED! since it was originally supposed to only run for a year, and the animation quality is still very hit-or-miss even without stock footage, but I suppose it manages to be mildly entertaining, and has gotten better since the beginning.
More music…I did like Rebuild of Evangelion's take on some of the classic tracks from the original series, and a lot of the new tracks were pretty grand as well. I think the composer's the same guy who does Bleach's music.
I've never watched the entirety of Cowboy Bebop...I really, really need to get on that.

One of my favorites is Gash Bell. I love the music that accompanies the action scenes. But, a lot of the other tunes they use fit the mood.

It's true NGE had a good soundtrack, I really like their take on "fly me to the moon".
Oh wow, Tsukishima, that one song from Saint Seiya gives me goosebumps, it takes me back to when I was a kid, I was a huge Saint Seiya fan.My favorite soundtracks have to be:
#1 Noir. I can listen to this any day and I'll love it.
#2 Cowboy Bebop.There a few other soundtracks that have some really good songs but don't travel on my mp3 player: Last Exile, the ED of Shingetsutan Tsukihime, Ergo Proxy had a nice OP and ED (can't fail if the use material by Radiohead), same goes for Gunslinger Girl (music by The Delgados), GTO had awesome OPs and EDs, same for HxH.

One Piece's OST is great. I'm talking about the background music, which I really don't think gets enough credit for how quality it really is. Even before I came to love the series, I loved the background music. lol.
Fullmetal Alchemist also has a great OST. I was so fortunate to actually find one (the third OST) today and buy it. I really love the adaptation of Chopin's Etude No. 3 with the orchestra, oboe, and English horn. Very beautiful (It's called

Yes, Line of Light is excellent, it's one of those songs that give you a boost. Chorus is another favourite of mine from that soundtrack, it gives me goosebumps. Sadly I couldn't find it on Youtube.

Yup, Shiro Sagisu did the music for both Bleach and Eva. And Rebuild's soundtrack is indeed awesome, the tracks with the ominous English chanting in particular.
