Because people tend to love and appreciate the influential and the innovative (think Citizen Kane, Jimi Hendrix and even Tezuka being considered the greatest whatever …film, guitarist, mangaka) . Dragonball, love it or hate it, is an absolute game changer in the world of action adventure shonen. The big three are all branches from the DB tree to an extent (especially One Piece). I love the first 16 volumes of DB (seriously, I think they are an incredible gem) and I think the last 26 volumes are inconsistent (they have their brilliant moments – but I prefer the wonderful energy and silliness of the earlier volumes.)
If you read the series from the start to finish you will experience an incredible journey with the main character - following him from young childhood into fatherhood and middle age. He went from being a tough monkey boy to being one of the most powerful beings in the universe.
Also I think nostalgia plays a role for some. I would say that it does for me but I grew up watching DBZ anime, not DB anime, and now the part of the manga that I like the most far and away is the DB-era.
It’s cool if DB is not your cup of tea – that a subjective matter…but you can’t deny Dragonball’s popularity and influence-that is the objective portion. If DB never existed we would not have OP – so you, I and everyone on these boards should be appreciative on Toriyama regardless of your individual opinion of his work.

Hokuto no Ken is overrated. I thoroughly enjoyed it and thought it was great, but it wasn't the masterpiece that I thought it would be when I read through it. I'd still say Dragonball was better with Goku being better than Kenshiro though that's still not saying Hokuto no Ken and Kenshiro weren't bad.

Well, to say One Piece would never exist sounds like a bit of a stretch since Oda was actually inspired to write a manga about pirates from a viking cartoon he watched as a kid, not Dragonball. But you are right that if DB never existed then OP would be nothing like it is now, and most Shonen would be radically altered without DB. So I guess I have to give Toriyama that much. I suppose Dragon Ball just isn't my thing, but other people really like it.
I just don't feel it should be on par with One Piece or Berserk, maybe I could understand it if it was the first 16 volumes, but as a whole I think there are a fair few too many flaws in the series (most notably how damn powerful the Saiyans became to the point that everyone else was pointless, one thing I like about One Piece and Berserk is that no matter how strong Luffy and Guts get the other Strawhats and some of Guts party are still able to participate in the battle regardless).
But that's just my opinion, I don't like it when characters become pointless, that was one of the main problems with Bleach and Naruto. I'm not saying every character has to play an integral role to the story but most, if not all, major and major supporting characters should be relevant somehow.
I think Toriyama having his physically weaker characters thrown by the wayside is a huge and legitimate flaw in Dragonball. We actually agree on this matter for the most part. I don't put Dragonball on par with Berserk or One Piece in my own lists either (all have flaws - DBs are a little more gaping and obvious.)
The upside to that flaw in Toriyama's storytelling is… other authors have learned from his mistakes. Oda in particualr.
-The powerhouses of the world are established early on, always there in the distance and don't just come out of nowhere. No new "biggest threat ever that's 10x stronger than the lat!" out of nowhere.
-Side characters keep growing and improving.
-minor characters are remembered.
-no training arcs.
-no tournaments
-actual goal in mind along with the exploration.
Naruto on the other hand, learned none of these lessons. Actually, there is ONE thing Naruto improved upon early on. When it did its token tournament arc, it randomized the battle roster every round. When Dragonball presented a clear cut chart you could tell who was going to make it through just by story weight, it being randomized was a great fix.
Don't forget how he trivialized death. Oda went WAY in the other direction on that one.

I love how Akamatsu took this to the next level and randomized his tournament so that even HE didn't know who was gonna fight who.

Yeah. I can definitely see how Kenshiro's more developed since he did change through the story while keeping his core personality. I also liked the getting stronger through sadness element as well. I'd say liking Goku's just more of a personal thing. I still loved all of the manly tears moments in Hokuto No Ken.

Almost Legendary has been vanquished.
I remember the two first manga that I readed. Shaman King and Houshin Engi. Both because I watched the anime, enjoyed it, and felt that the endings were severly lacking.
I managed to find all of the Snopycool scans of Houshin Engi and readed them, enjoying the world and a "different" main character.
I didn't find anything scaned about shaman king, and loved Yoh's character and motivation, even reading stupid spoilers and summaries of the plot, and I atributed nothing making sense to a poor translating job or the need for images.
Dakki's resolution didn't make complete sense but that could have avoided with an expansion on Ou Tenkun's character, that and transform 90% of the bishounen population into something else.
Shaman King on the other hand, once it hit america.. I don't know, nor care, what happened, but everything went to hell, long awaited fights happening off screen, number battles long after they stoped making sense, mass revivals, hypocrital messages, and the plot cancer know as HAO, a villian that's powerfull enough to beat everyone else's strengths combined, and even if he was defeated he could revive and try his plot again after you die it's boring and defeatist.
I got two endings all right, 3 if we count the Shaman King premature ending, but I only got one story worth remembering.
