Robin will get her own Intelligence Agency closely cooperating with Revolutionaries. If World Government knew it was her she would be worth 200 mil berry. But they won't know.
Sanji will need a therapy. Two years on Okama island will take their toll.
Usopp will look so good that no one will recognize him. They will really think he's a hero. But Luffy and Chopper will know better, since he won't be wearing a cape.
Nami will create a storm so huge all fanboys(girls) will say it's DRAGON. She will also run a weather business on sky islands gaining control over 30% of the market. When the time comes she will leave it all for her nakama.
Brooke will gain worldwide fame as a singer, and will have all the panties in the world.
Franky will become so SUPAAA his action figures will be the hottest item for 2 consecutive years.
Luffy and Zoro will kick more ass but won't change much, since they are perfect as they are.

Timeskip changes
Luffy - Facial hair, much more mature, ripped, will keep the straw hat and sandles. He'll development new haki/devil fruit abilities.
Zoro - Most likely will returned with visible scars, knowledge and improvement of haki, improved swordsmanship and new techniques.
Nami - Longer hair, new weather knowledge and an increased arsenal with new abilities.
Ussop - New hair, improved jungle/plant/survival knowledge and skills, improved arsenal of weapons and ripped.
Sanji - Incorporates Okama Kenpo into his fighting style, improved ability in martial arts, incorporates attack cuisine into his cooking/fighting repertoire and knowledge of haki.
Chopper - Incorporates new plants into medicines which could increase/extend any of his devil fruit abilities, more mature, taller and more developed antlers.
Robin - Connections with New World characters and the Revolutionary Army, increased knowledge of the lost history and current world events and will fu*k Dragon.
Franky - Improved arsenal and abilities, new hair, new tattoos, improved scientific knowledge.
Brook - Will learn to play and compose on guitar which he will incorporate into his fighting style/abilities.

I feel that Chopper will gain control of his Monster Point; as it would be on the same level of power as the amimal guards of Impel Down, and therefore good enough for the New World.

I would love to see a clip after the timeskip where the Straw hats are traveling to Fishmen island and are all rockin' to the song "Bone to be wild", this could be fun within the manga version but it would be even more fun in the anime. Perhaps all of them dressed up like rockstars.

chopper, new rumble ball, i don't think he will look older
robin, not much difference, maybe more Intel on the government and unmentionables
franky, more armor plating, more weapons and maybe some aesthetic changes
brook, i cant really think of anything else, exept for a new attire since his is really old and boring. -

So, if the "3 pillars" are still around after the skip, what will they look like?
The marines need a new fleet admiral, which logically means that an admiral will get promoted, meaning they need a new admiral, which logically means that a Vice Admiral will get promoted, which means that they will need two more VAs, as well as a few promotions to decide.
The shichibukai are in shambles, Doflamingo, Hancock, Mihawk, Kuma are the only ones left. So, 3 new shichis needed. Maybe Buggy for one?
With WB dead, the Yonkou have an open slot. Blackbeard?
of course, this is all assuming the power structure stays the same. The hierarchy of the marines shouldn't change, of course, but its possible that the entire notion of shichibukai could be re-defined, or even dissolved. And there's no rule stating that there have to be 4 emperors of the new world, 3 or even more than 4 is just as plausible.
